Muffins are a staple in my house. They make a great on the go breakfast, mid morning snack or just anytime of day treat. They are super moist and flavorful and can come in a variety of flavors. Since its Spring and berries are plentiful, I decided to incorporate them into my muffins, but which ones? Now I have already made muffins using strawberries and blueberries so I decided to try something different and incorporate blackberries into my muffins. Since blackberries pair well with chocolate, I decided to go with a chocolate base muffin. I must say, they were the perfect combination of rich chocolate and sweet fruity blackberries.

Chocolate Chocolate Chip Blackberry Muffins

Ingredients
2 Cups all purpose flour
3/4 Cup cocoa powder
2 1/2 Teaspoons baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon salt
1 Cup granulated sugar
2 Eggs
1 1/4 Cup buttermilk
1/2 Cup unsalted butter, melted
2 Teaspoons pure vanilla extract
1 1/2 Cup blackberries, fresh or frozen and cut in half.
1 Cup bittersweet chocolate chips
2 Teaspoons espresso powder
Directions
- Preheat oven to 375º. Line a muffin tin with paper liners and set to the side.
- To a large mixing bowl, whisk together the all purpose flour, cocoa powder, baking powder, baking soda, espresso powder and salt until combined, then set to the side.
- Melt butter in a microwave safe bowl. Place melted butter and granulated sugar into a large mixing bowl and whisk until completely combined. Add eggs one at a time, whisking after each addition. Add the buttermilk and vanilla extract and continue whisking until smooth. Pour into the dry ingredients and fold together using a rubber spatula until almost combined. Fold in the blackberries and bittersweet chocolate chips until combined.
- Fill each well of the muffin tin to 3/4 full. Sprinkle several chocolate chips on top of each one. Place in preheated oven and bake for 18 to 20 minutes or until toothpick inserted in the center of one of the muffins comes out clean. Remove from oven and allow to cool slightly before serving.
