Apple Cinnamon Crumb Muffins

These Apple Cinnamon Crumb Muffins are the perfect treat for apple season. The combination of warm spicy cinnamon and sweet apples then topped with a sweet crunchy topping, makes these muffins irresistible.

These Apple Cinnamon Crumb muffins are moist and tender and make the perfect on the go breakfast, snack or just as a treat. They are loaded with the delicious flavors of fall and topped with a crispy crumble topping that adds just the right amount of sweetness.

Tips For Making Apple Cinnamon Crumb Muffins

  • Choosing the right apples for this recipe is important. If your looking for a sweet crunchy apple I would go with a Fuji or Gala. If you would rather a more tart apple then Granny Smith is the way to go.
  • Dice the apples into small pieces so that they get dispersed throughout the batter and you get the flavor of sweet juicy apple with every bite.
  • Do not cut up your apples until your ready to use them. Cutting them too early will cause them to turn brown and nobody likes a brown apple.
  • For this recipe I start by making the crumble topping so that as soon as my muffins are prepared I can sprinkle some crumble topping on top and pop them right in the oven.
  • When baking these muffins, start at a high temperature. This will allow your muffins to rise rapidly, then lower the temperature after 5 minutes so that the centers can cook.

What You Will Need To Make Apple Crumble Muffins:

  • All Purpose Flour: I am fond of King Arthur Brand. I have tried many other brands but always make my way bake to them.
  • Baking Powder:

  • Salt:
  • Dark Brown Sugar: I like to use dark brown sugar for this recipe because dark brown sugar has a large content of molasses in it which brings a rich flavor to these muffins, but feel free to use light brown sugar if that is what you have.
  • Granulated Sugar:

  • Plain Greek Yogurt:
  • Pure Vanilla Extract:
  • Milk:
  • Butter: When baking I always use unsalted butter, this way I can control the amount of salt in my baked goods
  • Apples: For this recipe I used Fuji but feel free to use a Gala or even a Granny Smith for a more tart flavor.

How To Make Apple Crumble Muffins

Preheat the oven to 425º. Line a muffin tin with muffin liners and set to the side.

For The Crumb Topping:

To a small mixing bowl add the brown sugar, ground cinnamon, all purpose flour and quick oats and mix together to combine.

Add the melted butter and using a fork, mix until crumbles form. Set to the side.

For The Muffins:

To a large mixing bowl, whisk together the all purpose flour, baking powder, baking soda, cinnamon and salt. Set to the side.

To the bowl of a stand mixer fitted with a paddle attachment, beat the room temperature butter, granulated sugar and brown sugar until smooth, about 1 to 2 minutes, scraping down the bowl as needed. Add the eggs, yogurt, milk and pure vanilla extract and beat until combined, ( mixture may appear separated but that is fine ).

Add the flour mixture to the wet ingredients and mix to combine. Gently fold in apples until incorporated.

Fill the prepared muffin tins with batter to almost full. I space my muffins out so that they have room to expand. Top each muffin with a heaping tablespoon of crumble topping and pat down gently.

Place trays in preheated oven and bake for 5 minutes. While muffins are still in the oven, reduce heat to 350º and continue baking an additional 15 to 17 minutes or until a toothpick inserted in the center comes out clean and the crumble topping is golden brown. Remove from oven and allow to cool on a wire rack.

Ingredients:

For The Crumb Topping:

  • 1/3 Cup dark brown sugar
  • 1 Teaspoons ground cinnamon
  • 2 /3 Cup all purpose flour
  • 1/3 Cup quick oats
  • 1/4 Cup unsalted butter, melted

For The Batter:

  • 1 3/4 Cups all purpose flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon baking soda
  • 1 1/2 Teaspoons ground cinnamon
  • 1/2 Teaspoon salt
  • 1/2 Cup unsalted butter, at room temperature
  • 1/2 Cup brown sugar
  • 1/4 Cup granulated sugar
  • 2 Eggs
  • 1/2 Cup plain greek yogurt
  • 1/4 Cup milk
  • 2 Teaspoons pure vanilla extract
  • 1 1/2 Cups apples, peeled and diced ( about 2 medium apples

Instructions:

  1. Preheat oven to 425º. Line a muffin tray with paper liners and set to the side.
  2. For the crumb topping, add the brown sugar, cinnamon, flour and oats to a small mixing bowl. Pour in the melted butter and mix together using a fork until crumble forms. Set to the side.
  3. To Make the muffins, whisk the flour, baking powder, baking soda, cinnamon and salt in a large mixing bowl then set to the side.
  4. To the bowl of a stand mixer fitted with a paddle attachment, beat together the butter, brown sugar and granulated sugar until smooth, scraping down the sides of the bowl as needed. Add the eggs, yogurt, milk and vanilla extract and continue mixing until combined, ( at this point it may look curdled, that is ok ). Add the four mixture and continue to mix until incorporated, being careful not to over mix. Fold in the apples until combined.
  5. Fill the prepared muffin tins with batter until almost full. Place a heaping tablespoon of crumb topping on top of each muffin and pat down gently.
  6. Place in the preheated oven and bake for 5 minutes. With the muffins still in the oven, reduce heat to 350º and bake an additional 15 to 17 minutes or until crumble topping is golden brown and toothpick inserted in the center of one of the muffins comes out clean. Remove from oven and allow to cool
