Nutella Swirled Banana Muffins

In my house, we are crazy for bananas. In fact, I sometimes feel that we go through more bananas in a week then most families go through in a month. They are always sitting on the counter ready for someone to grab as a snack, or peeled and frozen to add to smoothies. Needless to say, there is never a shortage of bananas In my house. Since we buy so many, there are times when there are a few left over that don’t get consumed right away and end up getting a couple of brown spots on them. Normally these would be the ones that get peeled and frozen for smoothies, but every now and then I decide to use these ripe bananas for a recipe like a banana bread or pie to change things up a bit. These Nutella Swirled Banana Muffins were the perfect way to use up those extra ripe bananas. They were not only delicious but they were also super easy to make. So if you have a jar of Chocolate Hazelnut Spread and some really ripe bananas, why not give these muffins a try. I can guarantee they will soon become a snack time staple.

  • Plain Greek Yogurt: Low fat works fine.
  • Vanilla Extract: I like to use pure vanilla extract rather then imitation.

Nutella Swirled Banana Muffins

These Nutella Swirled Banana Muffins have the great flavors of banana and rich Nutella baked together to form these moist and tender muffins that your family will love.

Ingredients

  • 3 Medium very ripe bananas

  • 6 Tablespoons unsalted butter, browned

  • 2 Eggs

  • 3/4 Cup plain greek yogurt

  • 2 Teaspoons pure vanilla extract

  • 1/2 Cup granulated sugar

  • 2 Cups all purpose flour

  • 1 Teaspoon baking powder

  • 1/2 Teaspoon baking soda

  • 1 Teaspoon salt

  • 2/3 Cup Nutella

Directions

  • Start by browning your butter. Add butter to a small saucepan and place over medium heat. Cook for 4 to 5 minutes or until it starts to foam. Cook an additional 4 to 5 minutes, stirring occasionally until the liquid has turned golden and brown bits have formed at the bottom of the pan. Remove from heat and allow to cool slightly.
  • Preheat oven to 350º. Line a cupcake tray with paper liners and set to the side.
  • Mash peeled bananas and place into a large mixing bowl. Mix in the brown butter until combined. Add the eggs, sugar, vanilla extract and yogurt and mix until completely combined.
  • To a separate mixing bowl, whisk together the flour, baking powder, baking soda and salt until combined. Pour the flour mixture into the mashed banana mixture and fold in to combine.
  • Fill the prepared cup cake trays to 1/4 full with batter. Drizzle 1 teaspoon of Nutella on top. If the Nutella is too thick to drizzle, place it in a microwave safe bowl and microwave for 15 to 20 seconds to thin. Using a sharp knife or skewer, swirl the Nutella once or twice around to combine. Top with another scoop of batter to 3/4 full. Drizzle another teaspoon of Nutella on top and once again swirl in using a sharp knife or skewer. Place in the preheated oven and bake for 20 to 25 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely, then serve.
