I like to always have a fresh batch of baked muffins on hand so that the family can grab and go when in a rush, which is most of the time. The best thing about baking muffins is that they are really easy to make. No fancy equipment needed, just a mixing bowl, a whisk and a rubber spatula and you have yourself a smooth batter that you can scoop into muffin tins to make the most tender, flavorful little cakes.

How To Store Muffins:

  • Cooling: Make sure your muffins are completely cooled before storing. If not the heat from the muffins when placed in a container will start to condense, which will lead to soggy muffins. Place muffins on a cooling rack for at least 1 hour before storing.
  • Container: Once muffins are completely cooled, place them in an air tight container. This will keep them from becoming stale.
  • Storage Time: These muffins will last in an air tight container for up to three days on the counter or in the refrigerator.

Tips For Making These Muffins:

  • When making muffins, I like to space them out in the muffin tray. This will give the muffins room to expand and allow them to cook evenly.
  • Fill your muffin tins 3/4 of the way full. This will give the muffins room to rise.
  • Use fresh squeezed orange juice if possible. It will add intense orange flavor.

How To Make These Muffins:

Preheat oven to 350º. Line a muffin tin with paper liners and set to the side.

Start by making the streusel topping. To a small mixing bowl whisk together the brown sugar, all purpose flour, quick oats, orange zest and cinnamon until combined. Add the melted butter. Using a fork, mix until a crumb forms. Set to the side.

Whisk together the all purpose flour, sugar, baking powder, salt and orange zest in a large mixing bowl.

Add the egg, milk, orange juice and avocado oil and mix together with a rubber spatula until just combined.

Fold in the mini chocolate chips until incorporated.

Scoop out batter using a large ice cream scoop and fill each muffin liner 3/4 the way full. Top each one with a spoonful of streusel crumbs.

Place in preheated oven and bake for 18 to 20 minutes or until toothpick inserted in the center of one of the muffins comes out clean. Remove from oven and allow to cool slightly before serving.

  • 1/4 Cup al purpose flour
  • 1/4 Cup quick oats
  • 2 Teaspoons orange zest
  • 1/2 Teaspoon ground cinnamon
  • 2 Tablespoon unsalted butter, melted

For The Muffins:

  • 2 Cups all purpose flour
  • 1/2 Cup granulated sugar
  • 2 Teaspoons baking powder
  • 1/4 Teaspoon salt
  • Zest on one orange
  • 1 Egg, beaten
  • 1/2 Cup milk
  • 1/2 Cup fresh squeezed orange juice
  • 1/3 Cup avocado oil
  • 1/2 Cup semi sweet mini chocolate morsels.

Instructions:

  1. Preheat oven to 350º. Place paper liners inside the wells of a muffin tin and set to the side.
  2. To make the streusel top, place the brown sugar, flour, oats, orange zest and cinnamon in a small mixing bowl and mix to combine. Add the melted butter. Using a fork mix until a crumb forms. Set to the side.
  3. For the muffins, whisk together the all purpose flour, sugar, baking powder, salt and orange rind until combined.
  4. Make a well in the center of the flour mixture. Add the egg, milk, fresh squeezed orange juice and avocado oil. Using a rubber spatula, mix ingredients together until just combined. Fold in the mini chocolate chips until incorporated.
  5. Scoop out batter using a large ice cream scoop and fill each paper liner to 3/4 full. Top with a spoonful of prepared streusel topping.
  6. Place in the preheated oven and bake for 18 to 20 minutes or until toothpick inserted in the center of the muffins comes out clean.
  7. Remove from oven and place trays on a wire rack to cool slightly. Serve warm or allow to cool completely and store in an air tight container for up to 3 days.
