Chocolate Strawberry Muffins

These Chocolate Strawberry Muffins are super moist and have a deep intense chocolate flavor. The chunks of strawberry are sweet and juicy while the bittersweet chocolate chips add a richness to these muffins that makes them a chocolate lovers dream.

It is one of my favorite times of the year again, late Spring. This is the time when we all get in the car and head to our local farm and pick some strawberries. This in fact, is one of my fondest memories of my kids, now all grown up. They would always look forward to strawberry picking. We would always pick way more then what we could eat before they would go bad, but that was ok because we would either freeze them or make a tasty snack like Chocolate Strawberry muffins with the extras. Either way we enjoyed every bit of them.

I must say there is nothing like a fresh picked strawberry. They are super sweet and juicy and they are all strawberry through and through, no hollow centers like some store bought strawberries. They truly are perfect just as is but like I mentioned when you have a bit extra, they are a great addition to recipes like my Strawberry Scones or my Strawberry Goat Cheese Crostini. Plus the memories you will make picking strawberries is priceless.

How To Make Chocolate Strawberry Muffins

Now you can buy some fancy muffin liners or you can make your own, its pretty simple. Line a cupcake tray with your liners, but only use every other one. Leaving space between the muffins allows them to cook all around completely and also allows them to have room to grow.

Place prepared muffin tins to the side and preheat oven to 350º

In a large bowl whisk together the all purpose flour, unsweetened cocoa powder, baking powder, baking soda and salt then set aside.

In separate medium bowl whisk together the melted butter, avocado oil, granulated sugar, egg, pure vanilla extract, milk and yogurt.

Pour the wet ingredients into the dry ingredients and fold to combine, being careful not to over mix. Add the chocolate chips and the chopped strawberries and continue to fold in until combined.

Scoop out dough using a large ice cream scoop and place in prepared muffin pan. Sprinkle the top of each cupcake with a couple of chocolate chips and place in preheated oven for 18 to 20 minutes or until toothpick inserted in the middle comes out with just a few crumbs on it. Remove from oven and let cool on a wire rack, then serve.

Chocolate Strawberry Muffins

Ingredients:

  • 1 Cup all purpose flour
  • 1/4 Cup unsweetened cocoa powder
  • 1 1/2 Teaspoons baking powder
  • 1/4 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1/4 Cup plain greek yogurt
  • 3 Tablespoon butter melted
  • 3 Tablespoons avocado oil
  • 3 Tablespoons milk
  • 1/2 Cup granulated sugar
  • 1 Egg
  • 1 Teaspoon pure vanilla extract
  • 1/2 Cup bittersweet chocolate chips
  • 1/2 Cup chopped fresh strawberries

Instructions:

  1. Preheat oven to 350. Line a muffin tray with liners and set aside.
  2. In a large bowl whisk together all purpose flour, unsweetened cocoa powder, baking powder, baking soda and salt and set aside.
  3. In a separate medium bowl whisk together the melted butter, sugar, avocado oil, greek yogurt, granulated sugar, egg, milk and pure vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix to combine. Fold in the chocolate chips and strawberry chunks until combined.
  5. Scoop batter into prepared muffin trays and sprinkle the tops with a few chocolate chips, place in preheated oven and bake for 18 to 20 minutes or until a toothpick inserted in the middle comes out with a few crumbs attached. Remove from oven and allow to cool on a wire rack, then serve.
