Strawberry Goat Cheese Crostini

There is nothing better then the smell and taste of fresh picked strawberries. Every year in late Spring I always look forward to going to the local strawberry picking farm and spending an hour or two just filling our strawberry baskets with the sweetest berries that you could possibly imagine.

On the way home, with the scent of fresh strawberries filling the car, I think about all the recipes that I am going to make with the strawberries we just picked.

The fist recipe that always seems to come to mind are my Strawberry Goat Cheese Crostini’s With Balsamic Glaze.😋. With the charred crostini, creamy goat cheese, sweet strawberries and the slight tang from the balsamic glaze, it makes the perfect bite after the day on the farm.

Pre heat oven to 325º. Clean all strawberries and cut in half and place all but 1/2 cut of them in a large glass baking dish in a single layer. Drizzle with honey and bake in oven for 1 and 1/2 hours or until strawberries turn dark red and a syrup forms at the bottom of the pan. Take out of oven and let cool completely. Once cooled add remaining 1/2 cup of fresh cut strawberries and mix well to coat.

While the strawberries are cooling charr your crostini. I just throw it on the grill as to not set off my fire alarms.😬 I spread the creamy goat cheese on top of each crostini and then top with the cooled strawberries. I drizzle a little balsamic glaze on top and then sprinkle with some minced fresh basil. Your guest will love them.

Strawberry Goat Cheese Crostini

Ingredients:

  1. 2 Baskets of strawberries, about 2 to 3 lbs hulled and cut in half
  2. 1/2 Cup of strawberries cut in half
  3. 1 Baguette cut into thin slices on an angle and charred on both sides
  4. 1 8oz Package of goat cheese
  5. 3 Tablespoons of honey
  6. 2 Tablespoons balsamic glaze
  7. 1 Tablespoon fresh basil minced

Instructions:

  1. Pre heat oven to 325º
  2. Clean all the strawberries and slice in half. Place all but a 1/2 cup of strawberries into a glass baking dish in a single layer, place remaining strawberries on the side for later use. Drizzle strawberries in the baking dish with honey and bake in the oven for 1 and 1/2 hours or until dark red and a syrup forms at the bottom of baking dish. Remove from oven and allow to cool completely. Add remaining diced strawberries and mix to coat.
  3. Charr baguette on both side and place on serving tray. Spread each baguette with a small amount of goat cheese, top with cooled strawberries, drizzle with balsamic and sprinkle minced basil on top. Serve immediately.
