I’m always looking for a way to sneak in some vegetables into snacks. I figure if your going to have a treat, why not get something out of it. Zucchini is the perfect vegetable for this. It doesn’t alter the taste of the dessert but adds a good amount of moisture, which is perfect for cakes and breads. It is also a good source of fiber, so this bread is good for you, right? How To Make Lemon Zucchini Bread With Lemon Glaze:
Preheat oven to 350º. Coat a loaf pan with cooking spray and set aside.
In a large bowl I whisk together my all purpose flour, baking powder and salt and I set it aside.
To another large bowl I added my avocado oil, sugar, eggs, lemon juice, lemon zest and vanilla extract. I whisked the ingredients together until well combined.
I pealed most of the skin off of the zucchini, leaving some on so that the bread has some specks in it. I shred the zucchini using a box grater on its smallest side. I placed the shredded zucchini in the bowl with the wet ingredients and stirred to combine.
I added my zucchini mixture to my dry ingredients and mixed until it was completely incorporated. Then I poured it into the prepared loaf pan and placed it in the preheated oven for 50 to 60 minutes or until a toothpick inserted in the middle of the loaf comes out clean.
I removed it from the oven and let it cool completely.
While the bread was cooling I made my glaze. In a small bowl I added my powdered sugar and my lemon juice and whisked it together until smooth.
I removed the cake from the pan and poured my lemon glaze over the top and let sit to set.

Lemon Zucchini Bread With Lemon Glaze
Ingredients:
Lemon Zucchini Bread
- 2 Cup all purpose flour
- 2 Teaspoons baking powder
- 1/2 Teaspoon salt
- 2/3 Cup avocado oil or vegetable oil
- 1 1/4 Cups granulated sugar
- 2 Eggs
- 1 Teaspoon pure vanilla extract
- 1 Tablespoon fresh squeezed lemon juice
- 2 Tablespoons lemon zest, about 3 lemons
- 1 1/2 Cups partially peeled shredded zucchini
Lemon Glaze
- 1 Cup powdered sugar
- 2 Tablespoons fresh squeezed lemon juice
Instructions:
- Preheat oven to 350º. Spray a 9” x 5” loaf pan with baking spray and set aside.
- In a large mixing bowl whisk together all purpose flour, baking powder and salt and set aside.
- In a separate large mixing bowl add oil, granulated sugar, eggs, vanilla extract, lemon juice and lemon zest and whisk together until completely combined. Add the shredded zucchini and whisk once again to combine.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to over mix.
- Pour batter into prepared loaf pan and place in the preheated oven. Bake bread for 55 to 60 minutes or until toothpick inserted in the middle comes out clean.
- Remove from oven and allow to cool on a wire rack. Once cooled remove the bread from pan and return to wire rack.
For The Lemon Glaze:
- In a medium bowl combine powdered sugar and lemon juice and whisk together until smooth. Pour glaze over cooled bread. Allow glaze to set for 30 minutes before serving.
