Apple Walnut Breakfast Cookie

These breakfast cookies are full of wholesome nutritious ingredients to give you a great start to your day when you don’t have time for a sit down breakfast or as a healthy snack after a hard workout. Made with oats, ground flax seeds, walnuts and dried apples they are packed with healthy fats and fiber.

Mornings are hectic. Most of the time your running out of the house with a slice of toast to get you through till lunch. On days like that I like to have something with a little more nutrition then a slice of toast. These cookies are a great option. They’re a cookie that eats like a meal. They are loaded with oats which are rich in vitamins and minerals, ground flax seeds and walnuts which are loaded with healthy fats and dried fruit which have tons of fiber. With all those ingredients packed into one cookie, you will feel totally satisfied that you are not only eating a cookie that taste great but is also giving you the nutrition you need.

How To Make Apple Walnut Breakfast Cookies:

Preheat oven to 350º. Line a baking sheet with parchment paper and set aside.

To the bowl of a stand mixer add room temperature butter, brown sugar and honey and mix until completely combined. Scrape the sides of the bowl and then mix once again.

Add eggs one at at a time mixing between each addition. Whenever a recipe calls for eggs I always crack them into a small separate bowl rather then into my mixing bowl, this way if a piece of shell falls into the bowl it will be easy to retrieve.

Add both extracts and mix to combine.

Mix in the ground flax seed until incorporated.

To a separate medium size bowl add the all purpose flour ( I love King Arthur’s Flour ), baking soda, cinnamon and fresh ground nutmeg ( you can use ground nutmeg in a jar but I find grinding it fresh makes a big difference ). Whisk ingredients together until combined. Add flour mixture to butter mixture and mix until just combined.

Add the chopped walnuts, raisins and dried apples. I love getting my dried fruit from Nuts.com, they have a great variety of dried fruits and nuts and there products are high quality. Mix until just combined.

Add the oats and mix until incorporated.

Scoop out cookie dough using a large cookie scoop and place on prepared cookie sheet. Roll dough into ball then flatten slightly. Form dough into rectangle and place in preheated oven and bake for 15 to 18 minutes or until golden brown.

Once cooled I pre package these cookies in air tight bags so that you can grab one on your way out.

Apple Walnut Breakfast Cookies

Ingredients:

  • 2 Sticks room temperature unsalted butter
  • 1 Cup brown sugar
  • 1/2 Cup honey
  • 2 Eggs
  • 1 Teaspoon pure vanilla extract
  • 1 Teaspoon pure almond extract
  • 1/3 Cup ground flax seeds
  • 1 3/4 Cup all purpose flour
  • 1 Teaspoon baking soda
  • 1 1/2 Teaspoon ground cinnamon
  • 1/4 Teaspoon fresh ground nutmeg
  • 3 Cups old fashion oats
  • 1 Cup dried apples chopped into small pieces
  • 1 Cup raisins
  • 1 Cup chopped walnuts

Instructions:

  1. Preheat oven to 350º. Line a baking sheet with parchment paper and set aside.
  2. Add butter to the bowl of a stand mixer and mix on medium until smooth. Add brown sugar and honey and continue mixing until combined.
  3. Crack two eggs into a small bowl. Pour eggs one at a time into butter mixture, mixing after each addition. Add vanilla and almond extract and mix until completely combined, scraping the sides and bottom of the bowl with a rubber spatula as needed.
  4. To a separate large bowl add flour, ground flax seeds, baking soda, cinnamon and fresh ground nutmeg, whisk to combine. Pour the flour mixture into the butter mixture and mix on low until incorporated.
  5. Add raisins, dried apples and chopped walnuts and mix just to combine. Add old fashion oats and continue mixing until all ingredients are incorporated.
  6. Scoop out cookie dough with a large ice cream scoop. Roll each cookie to form a ball and place on prepared baking sheet. Flatten each cookie and form into a rectangle. Place in preheated oven and bale for 15 to 18 minutes or until golden brown. Remove from oven and let cool on a wire rack.
