Rustic Fig Tart

These Fig Tarts are the perfect dessert when you want something sweet and delicious to impress your guest but don’t have a lot of time to prepare it.

I love a dessert that looks like you spent a ton of time on it, but in reality was super quick and easy to make. Besides being easy to make it is also quite good.

Every year I look forward to a fig crop from my fig tree. This tree is special to me because it was grown from a clipping from my fathers fig tree. He since passed away but I can remember how excited he was when the figs started to form. Now I find myself feeling the same way. At the first sigh of figs forming I get so excited. I start to think about what I can make with them, Now I am growing a clipping from my tree to give to my son and his wife. My hope is that one day he will do the same so that my fathers tree will be around for generations to come. I’m sure that would of made him very happy.

How To Make The Rustic Fig Tarts:

Preheat oven to 400º. Line a baking sheet with parchment paper and set aside.

There are many different varieties of figs. My fig tree produces figs with dark skins, which are know for having a high sugar content, which gives them a great sweet taste. This is perfect for this dessert because there is very little added sugar.

I started by rinsing and cutting off the stems of the figs.the figs then I sliced them into thin slices and placed them on the side while I work on the pastry.

My secret for making this dessert easy to make is store bought puff pastry. I alway keep a box of store bought puff pastry in my freezer. Just defrost and use. Now don’t get me wrong, I love making everything from scratch but if you need to make something in a hurry this would be the place that I would cut corners and use store bought. That is why having one on hand in the freezer is perfect. Just remove from the freezer and let sit out until easy to handle but still slightly cool, making sure you don’t leave it out too long so that it becomes warm.

Once puff pastry is easy to handle, place it on a lightly floured surface and roll it out slightly to smooth it out, making sure not to over work it.

Using a 5” bowl as a stencil, cut out four circles and place them on a parchment lined baking sheet. Place a 4” bowl in the center of each circle and press down slightly to make an impression but making sure not to cut through the pastry. Brush each circle with melted butter and sprinkle the inner circle with granulated sugar and chopped almonds.

Place sliced figs on the puff pastry in the inner circle in a circular pattern. Brush each one with the remaining melted butter. Sprinkle each one with a pinch of cinnamon and a drizzle of honey. Place in a preheated oven and bake for 18 to 20 minutes until figs are juicy and crust has become a golden brown.

Remove from oven and serve immediately with a scoop of vanilla ice cream. It’s that easy. Give these Rustic Fig Tarts a try I’m sure they will became a staple in your dessert repertoire just like they have for me.

Rustic Fig Tart

Ingredients:

  • 8 Fresh figs
  • 1 Sheet store bought puff pastry defrosted but still chilled
  • 1 to 2 Teaspoons granulated sugar
  • 2 Tablespoons unsalted butter melted
  • 1 to 2 Tablespoons finely chopped almonds
  • 1/2 Teaspoon ground cinnamon
  • 3 Tablespoons honey
  • Vanilla ice cream for serving ( optional )

Instructions:

  1. Preheat oven to 400º. Line a baking sheet with parchment paper.
  2. Rinse figs, remove stems and slice into thin slices, set aside.
  3. Roll puff pastry on a lightly floured surface just to smooth out. Using a 5” bowl as a stencil, cut out four circles and place them on the prepared baking sheet. Place a 4” bowl in the center of each circle and press down slightly to make an impression but making sure not to cut through the pastry.
  4. Brush each sheet with melted butter and sprinkle inner circle with 1/4 teaspoon of granulated sugar. Top with 1 teaspoon finely chopped almonds. Arrange sliced figs on pastry, keeping them within the inner circle, in a circular pattern.
  5. Brush figs with remaining melted butter. Sprinkle each tart with 1/8 teaspoon ground cinnamon and drizzle with half the honey.
  6. Place in preheated oven and bake for 18 to 20 minutes or until figs have softened and pastry has puffed and become golden brown.
  7. Remove from oven, serve immediately with a scoop of vanilla ice cream and a drizzle of honey.
