Blackberry Lemon Scones

Blackberry Lemon Scones are the perfect treat to serve with breakfast or a great addition to a brunch table. They are light and tender and filled with juicy blackberries and topped with a drizzle of honey. The perfect start to any day.

I love scones because they are not overly sweet. They are tender buttery pastries that are best served with a drizzle of honey and some fresh churned butter if your feeling really ambitious. They are the perfect treat for any occasion, weather it be for a mid morning pick me up or an after school snack, they are the perfect bite to satisfy anyone.

These scones are not only delicious but they are really easy to make. You could have them prepared and baked in less then an hour. There are just two things to remember when making scones.

  1. Your butter should be very cold. What I really like to do when I’m making a recipe that calls for cold butter is to cut it up into small cubes and then store it in the freezer until I’m ready for it. This is the key to having a tender scone.
  2. Minimal handling. The less you handle the dough the more tender your scones will be.

How To Make Blackberry Scones

Preheat oven to 400º. Line a baking sheet with parchment paper and set aside.

To a large mixing bowl add the all purpose flour, the 3 tablespoons of sugar, baking powder, salt, lemon zest and cinnamon. Whisk together until completely combined.

I removed the pre cut butter from the freezer and added it to my flour mixture

Now the best thing to use to incorporate the butter into the flour is a pastry cutter. If you don’t have a pastry cutter you can also use a fork. You want to cut in the butter until the largest pieces of butter are pea sized. Just make sure not to over mix, you don’t want tough scones.

Rinse off your blackberries, place them in the flour mixture and toss to coat.

To a separate medium bowl add eggs, heavy cream and fresh squeezed lemon juice. Whisk together until smooth.

Pour the wet ingredients into the dry ingredients and toss gently until dough comes together.

Bring dough together to form a rectangle, doing your best not to handle the dough too much.

Cut the dough into triangles and place on prepared baking sheet. Brush the tops with heavy cream using a pastry brush. Sprinkle your remaining granulated sugar on top of each one and place in the pre heated oven on the middle rack.

Bake scones for 20 to 22 Minutes or until golden brown.

Remove from oven and drizzle with honey. Serve immediately with some fresh churned butter or just eat as is. Either way they are perfect.

Blackberry Lemon Scones

Ingredients:

  • 2 Cups all purpose flour plus more for dusting
  • 4 Tablespoons granulated sugar
  • 1 Tablespoon baking powder
  • 1/2 Teaspoon salt
  • 6 Tablespoons very cold butter, cut into small pieces
  • 1 1/2 Cups fresh blackberries rinsed
  • 1 Teaspoon cinnamon
  • Zest of one lemon, about 1 tablespoon
  • 1/3 Cup heavy cream, pulse more for coating
  • 1 Tablespoon lemon juice
  • 2 Large eggs

Instructions:

  1. Preheat oven to 400º. Coat a baking sheet with parchment paper and set aside. Cut up butter into small cubes and place in freezer until ready to use.
  2. In a large bowl whisk together flour, 3 tablespoons granulated sugar, baking powder, lemon zest, cinnamon and salt. Remove butter from freezer and scatter in flour mixture. Using a pastry cutter or a fork, cut in the butter the size of peas. Gently fold in the blackberries.
  3. In a separate medium bowl whisk together the eggs, cream and lemon juice. Pour the cream mixture into the flour mixture and gently fold in using a rubber spatula.
  4. Turn dough out onto a lightly floured surface and knead until dough comes together. Form dough into a rectangle. Using a sharp knife or a food scraper, cut into eight triangles. Transfer scones to prepared baking sheet. Using a pastry brush, coat each one with heavy cream. Sprinkle the tops with the remaining granulated sugar and place in preheated oven and bake for 20 to 22 minutes or until golden brown.
  5. Remove from oven, drizzle with honey and serve.
  6. Enjoy.
