A fun take on two classic desserts. The buttery texture of a cookie with the sweet cinnamon flavor of a moist coffee cake, making the perfect combination of flavors and textures.

Ingredients

  • For The Cookie
  • 1 Cup unsalted butter, softened

  • 1 1/4 Cup brown sugar

  • 1 Egg + 1 egg yolk

  • 1 Tablespoon milk

  • 2 Teaspoons pure vanilla extract

  • 2 3/4 Cup all purpose flour

  • 1 1/2 Teaspoons baking powder

  • 1 Teaspoon ground cinnamon

  • 1 Teaspoon cornstarch

  • 1/2 Teaspoon baking soda

  • 1/2 Teaspoon salt

  • Crumble Topping
  • 1/2 Cup + 2 tablespoons all purpose flour

  • 1/4 Cup brown sugar

  • 2 Tablespoons granulated sugar

  • 1 Teaspoon ground cinnamon

  • 1/4 Cup unsalted butter

  • Icing
  • 1/3 Cup powdered sugar

  • 1/4 Teaspoon vanilla extract

  • 2 Teaspoons milk

Directions

  • For The Crumble Topping
  • Whisk the flour, brown sugar, granulated sugar and ground cinnamon in a small bowl. Microwave the butter in a microwave safe bowl until melted. Pour melted butter into the flour mixture and mix to form a crumble. Place mixture in the refrigerator until needed.
  • For The Cookie
  • Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
  • Using a hand mixer, beat the butter and brown sugar together in a medium bowl until smooth. Add the egg, egg yolk and the vanilla extract and continue beating until fluffy.
  • In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, cornstarch and salt until combined. Pour the flour mixture into the butter mixture and continue beating until just combined.
  • Scoop out cookie dough using a smell ice cream scoop and place the dough balls 2” apart on the prepared baking sheet. Make a small indent in the center of each dough ball. Fill the indent with the prepared crumble topping then place in the preheated oven and bake for 10 to 12 minutes or until edges are golden. Remove from oven and allow to cool on a wire rack.
  • For The Icing
  • Whisk the powdered sugar, milk and water together in a small bowl until it forms a drizzle like consistency. Drizzle the tops of the cooled cookies with the prepared icing and allow to set.
