Ingredients
1 Cup All Purpose Flour
1/2 Cup Dutch Cocoa Powder
1 Teaspoon baking soda
1 Teaspoon Espresso Powder
1/2 Teaspoon salt
1/2 Cup unsalted butter, browned
3/4 Cup Dark Brown Sugar
2 Eggs
1/2 Cup plain greek yogurt
1 Teaspoon Pure Vanilla Extract
3 Very ripe bananas, mashed
Directions
- Place butter in a small saucepan set over medium heat and cook stirring occasionally until liquid turns slightly golden and brown bits form at the bottom of the pan. Remove from heat and set to the side to cool slightly.
- Preheat oven to 350º. Spray a 9” x 5” loaf pan with baking spray. Line the pan with a sheet of parchment paper and set to the side.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, espresso powder and salt until combined. Set to the side.
- In a medium sized bowl, whisk together the brown sugar and cooled brown butter until smooth. Add the eggs, greek yogurt and vanilla extract and beat until combined.
- Place the peeled ripe bananas on a plate. Using a fork, mash the bananas until smooth. Add the mashed bananas to the brown butter mixture and mix to combine. Pour into the flour mixture and using a rubber spatula, fold the ingredients together until mostly combined. Add the chocolate chunks and fold in to incorporate.
- Pour the batter into the prepared loaf pan. Sprinkle the top with extra chocolate chunks then place in the preheated oven and bake for 55 to 60 minutes or until a toothpick inserted in the center comes out mostly clean. Remove from oven and allow to cool slightly before serving.
