  • All Purpose Flour: Is a versatile flour that is used for most baked goods.
  • Baking Powder: Creates air bubbles in the batter which gives baked goods a light airy texture.
  • Baking Soda: When mixed with an acid like buttermilk, it creates carbon dioxide which will allow your baked goods to rise.
  • Ripe Mashed Banana: Not just ripe but overripe. You know the ones with all the brown spots that everyone avoids. The more brown spots the better. This is when bananas are at their sweetest.
  • Granulated Sugar: Granulated sugar is the perfect sweetener for this recipe due to its neutral flavor.
  • Buttermilk: Gives baked goods a moist texture, and because of its acidity, when it is combined with baking soda in recipes, allows them to rise.
  • Avocado Oil: I like using avocado oil because of its health benefits and its neutral flavor. If you don’t have avocado oil, vegetable oil will work as well.
  • Brown Rice Miso Paste: This will add a salty yet sweet nutty flavor to your banana bread.
  • Pure Vanilla Extract: I rather use pure vanilla extract rather than imatation vanilla extract for its intense flavor but Imatation vanilla will work as well.
  • Bittersweet Chocolate Chips: I like using bittersweet chips but a semisweet chip will work as well.

This Chocolate Chip Miso Banana Bread is a combination of sweet bananas and nutty miso. It is moist and tender and every bite is loaded with rich chocolate flavor.

Ingredients

  • 1 3/4 Cup all purpose flour

  • 1 Teaspoon baking powder

  • 3/4 Teaspoon baking soda

  • 1 Cup mashed over ripe bananas, about 2 medium bananas

  • 3/4 Cup granulated sugar

  • 1/2 Cup buttermilk

  • 1/3 Cup avocado oil

  • 3 Tablespoons brown rice miso

  • 1 Teaspoon pure vanilla extract

  • 1 Cup bittersweet chocolate chips

Directions

  • Preheat oven to 350º. Line a 9” x 5” loaf pan with parchment paper, spray with baking spray and set to the side.
  • To a large mixing bowl, whisk together the all purpose flour, baking powder and baking soda until combined. Set to the side.
  • To a separate large mixing bowl add the mashed banana, granulated sugar, buttermilk, avocado oil, brown rice miso paste and pure vanilla extract. Mix together until completely combined.
  • Pour wet ingredients into dry ingredients and mix until just combined. Fold in the chocolate chips until incorporated.
  • Pour batter into prepared loaf pan and bake in preheated oven for 55 to 60 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool slightly. Remove bread from the pan and allow to cool completely on a wire rack.
