Ingredients For Making These Muffins

  • Flour: All purpose will do.
  • Baking Powder & Baking Soda: These are leavening agents which will allow your muffins to rise.
  • Cinnamon & Nutmeg: These spices add a bit of warmth and are a perfect accompaniment to apples.
  • Butter: I always opt for unsalted butter so that I can control the salt content in my recipes.
  • Dark Brown Sugar: I like to use dark brown sugar for this recipe for its deep caramelized flavor but light brown sugar will work as well.
  • Granulated Sugar: for added sweetness.
  • Eggs: Large and room temperature.
  • Plain Greek Yogurt: Low fat works well.
  • Milk: Whole or low fat.
  • Vanilla Extract: I always opt for pure vanilla extract rather than imatation vanilla extract for its intense flavor.
  • Salt: A pinch of salt will intensify the flavors.
  • Apples: For this recipe I used a tart Granny Smith. I grated them using the large side of a box grater which made it so the apple flavor was incorporated throughout the muffin. If you prefer to use a sweeter apple like a Fuji or Gala, that would work as well.

These Cinnamon Apple Muffins With Walnut Streusel Topping are moist and tender and loaded with the flavors of warm spices and tart juicy apples then topped with a sweet walnut streusel for just a little added crunch.

Ingredients

  • For The Muffins
  • 1 3/4 Cup all purpose flour

  • 1 Teaspoon baking powder

  • 1 Teaspoon baking soda

  • 1 1/2 Teaspoons ground cinnamon

  • 1/4 Teaspoon ground nutmeg

  • 1/4 Teaspoon salt

  • 1/2 Cup ( 1 stick ) unsalted butter, at room temperature

  • 1/2 Cup dark brown sugar

  • 1/4 Cup granulated sugar

  • 2 Eggs, at room temperature

  • 1/2 Cup plain greek yogurt ( low fat works well )

  • 2 Teaspoon pure vanilla extract

  • 1/4 Cup milk, ( low fat or whole )

  • 3 Medium Granny Smith Apples, peeled and grated using the largest setting of a box grater.

  • Streusel Topping
  • 3/4 Cup chopped walnuts

  • 1/2 Cup all purpose flour

  • 1/2 Cup dark brown sugar

  • 1/2 Teaspoon ground cinnamon

  • 3 Tablespoons unsalted butter, melted

Directions

  • Preheat oven to 350º. Line two muffin tins with paper liners and set to the side.
  • To a large mixing bowl, whisk together the all purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg and salt until combined. Set to the side.
  • In a separate large mixing bowl, using a hand mixer, blend together both sugars and softened butter until smooth and creamy. Add in the eggs one at a time mixing after each addition. Add the pure vanilla extract, plain greek yogurt and milk and continue mixing until just combined. Pour mixture over the dry ingredients and fold in using a rubber spatula until just combined. Fold in the grated apples until incorporated.
  • Scoop out batter using a medium Ice cream scoop and place into the prepared muffing tin, then set to the side while you prepare your walnut streusel topping.
  • For the streusel topping, place the chopped walnuts, flour, brown sugar and cinnamon in a small mixing bowl and whisk together until completely combined. Add the melted butter and blend together with a fork until mixture comes together and large crumbs start to form. Place a spoonful of streusel on top of each muffin.
  • Place muffin tray in the preheated oven and bake for 18 to 20 minutes or until streusel has turned golden brown and toothpick inserted in the center of one of the muffins comes out clean. Remove from oven and place on a cooling rack to cool slightly before serving. Store left over muffins in an air tight container on the counter for up to 3 days or in the freezer for up to 3 months.
