Ingredients

  • For The Muffins
  • 2 Cups All Purpose Flour

  • 1 Tablespoon baking powder

  • 1/4 Teaspoon baking soda

  • 1/4 Teaspoon salt

  • 3/4 Cup Granulated Sugar

  • 1/2 Cup unsalted butter, melted

  • 2 Eggs

  • 1/2 Cup buttermilk

  • 1 1/2 Teaspoon Pure Vanilla Extract

  • 2 Cups fresh strawberries chopped into small pieces.

  • 1/4 Cup Strawberry Fruit Spread Or strawberry preserves

  • For The Streusel Topping:
  • 1/2 Cup all purpose flour

  • 1/3 Cup brown sugar

  • 1/4 Cup unsalted butter, melted

  • 1/2 Teaspoon Ground Cinnamon

  • For The Streusel Topping:
  • Whisk together the flour, brown sugar and cinnamon in a small bowl. Pour in the melted butter and mix with a fork to from a crumble. Place in the refrigerator while preparing the muffins.

  • Preheat oven to 375º. Line your muffin pan with paper liners and set to the side.
  • In a large mixing bowl whisk together the flour, baking powder, baking soda and salt until combined. Set to the side.
  • In a separate large mixing bowl, whisk together the melted butter and brown sugar until combined. Add the eggs, buttermilk and vanilla extract and continue mixing until combined. Pour into the dry ingredients and mix until incorporated..
  • Place the diced strawberries in a medium bowl along with the strawberry preserves and toss to combine. Fold into the muffin batter until incorporated..
