I have tried to come up with a healthy on the go snack for my family. Now I know you can buy those power bars at the store but I find that they are more like dessert then a healthy snack. Most of them are loaded with sugar and lack the healthy ingredients that I am looking for. I wanted a snack that I could give to my kids as an on the go breakfast when they were running late or as a snack between school and sports. First and foremost it had to taste good, if it didn’t then they wouldn’t eat it. I also didn’t want it to be overly sweet like the bars I find in the stores. It also had to for fill there hunger until they could have a proper meal.

Well these Strawberry Almond Breakfast Cookies hit every mark. Not only are they tasty but they have nutritional value as well. With the addition of oats, ground flax seeds, almonds and dried fruits, they have all the healthy ingredients you need to get you through your day and with a touch of honey and brown sugar they have the perfect amount of sweetness to satisfy anyone’s sweet tooth.

Tips For Making Strawberry Almond Breakfast Cookies:

  • This recipe calls for shredded coconut. I use unsweetened as to not add extra unnecessary sugar.
  • It also calls for dried strawberries not freeze dried strawberries. The only place I have ever seen them is online. Nuts.com has a great selection. For this recipe I used the Organic Dried Strawberries. They are sweetened with apple juice concentrate.
  • Use ground flaxseeds rather then whole flaxseeds. Ground flaxseeds are much easier to digest and don’t have to be broken down first to benefit from there nutrients.

Strawberry Almond Breakfast Cookies:

Ingredients:

  • 3 Cups old fashion oats
  • 1 3/4 Cup all purpose flour
  • 1/3 Cup ground flaxseed
  • 2 Sticks unsalted butter, at room temperature
  • 1 Cup light brown sugar
  • 1/2 Cup honey
  • 1 Teaspoon pure vanilla extract
  • 1 Teaspoon pure almond extract
  • 2 Eggs
  • 1 1/2 Teaspoons ground cinnamon
  • 1 Teaspoon baking soda
  • 1 Cup naturally dried strawberries, chopped ( not freeze dried )
  • 1 Cup unsweetened dried shredded coconut
  • 1 Cup Almonds chopped

Instructions:

  1. Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
  2. To the bowl of a stand mixer fitted with a paddle attachment beat the softened butter until creamy. Add the brown sugar and honey and continue mixing until incorporated, scraping the sides of the bowl with a rubber spatula as needed. Add the eggs one at a time, mixing after each addition. Add the vanilla and almond extract and continue mixing until combined.
  3. To a separate large mixing bowl whisk together the all purpose flour, baking soda and cinnamon. Pour the dry ingredients into the wet ingredients and mix until just combined.
  4. Add oats, chopped dried strawberries, coconut and chopped almonds and mix until completely incorporated.
  5. Scoop out dough using a large ice cream scoop. Place on the prepared baking sheet at least 2” apart. Flatten slightly and form into a rectangle. Place in preheated oven and bake for 15 to 18 minutes or until golden brown. Remove from oven and allow to cool completely on a wire rack. Store in an air tight container for up to a week.
