Roasted Delicata Squash

Roasted Delicata Squash is sweet and tender and is the perfect accompaniment to any meal.

Delicata Squash is a creamy winter squash that is readily available in the fall and winter months along with other squashes such as butternut and acorn the difference being that its tender outer skin is completely edible when roasted.

When cooking there is no need to add any sweetener to this dish because Delicata Squash has a natural sweetness to it. It is rather easy to prepare and makes a beautiful addition to any table.

How To Prepare Delicata Squash For Roasting

Preheat oven to 375º.

First remove any dirt that might be caught in the deep creases of the squash by rinsing under cool water. Once squash is clean, place it on its side on a cutting board. Cut off the top stem then cut it in half, starting at the top of the squash and making your way to the bottom until it is in two pieces. Using a tablespoon, remove the seeds and place to the side.

Once all the squash is cleaned , place it flesh down on a cutting board and cut it into 1/2” slices and place the slices in a casserole dish.

To a small bowl add the olive oil and minced garlic and whisk to combine. Pour oil mixture over squash and toss to coat.

Sprinkle with salt, pepper and fresh thyme and once again toss to coat.

Place in preheated oven and bake for 30 minutes or until slightly golden and fork tender. Remove from oven and serve warm.

Roasted Delicata Squash

Ingredients:

  • 2 To 4 Delicata squash
  • 2 to 4 tablespoons of olive oil
  • 2 Garlic cloves minced
  • Pinch of salt and pepper
  • 1 Teaspoon fresh thyme

Instructions:

  1. Preheat oven to 375º.
  2. Rinse Delicata Squash to make sure there is no dirt in there deep creases. Place squash on its side on a cutting board. Cut off the top where the stem is located. Cut squash in half by starting at the top and making your way to the bottom of the squash. Using a tablespoon, scoop out all of the seeds and dispose of them. Place squash flesh side down on a cutting board and cut into 1/2” slices and places slices in a casserole dish.
  3. In a small bowl whisk together olive oil and minced garlic and pour over squash to coat. Sprinkle with salt, pepper and fresh thyme and once again toss to coat.
  4. Place in preheated oven and bake for 30 to 40 minutes or until slightly golden and fork tender. Remove from oven and serve warm.
  5. Enjoy.
