Caramelized Shallot Herb Bread

I have made many different flavor breads in my day, like my Blueberry Lemon Loaf With Crumble Top, or my Lemon Zucchini Bread With Lemon Glaze and many others. Most of the breads I have made in the past have been sweet breasts. So when making this bread I wanted to change it up and make a savory bread. That is when I thought of this Caramelized Shallot Herb Bread..

A Shallot is a member of the onion family. They have a delicate sweet flavor with a hint of sharpness. A Shallot can be substituted for an onion in nearly all recipes. When substituting a Shallot for an onion just remember that for every one small onion substitute three shallots, they are quite a bit smaller then onions.

If you can’t find shallots you can substitute an onion, you might just have to cook it a bit more to get a more crispy texture. Either way this bread is a delicious treat that you must try.

How To Make Caramelized Shallot Herb Bread

Start by peeling and slicing your shallots and placing them in a large frying pan with a drizzle of olive oil, Place on medium heat and sauté until caramelized and slightly crispy. Remove from heat and allow to cool.

Preheat the oven to 350º. Spray a loaf pan with cooking spray and set to the side.

In a large mixing bowl combine the all purpose flour, grated Parmesan cheese, granulated sugar, chopped fresh rosemary, chopped fresh thyme, baking powder, baking soda, lemon zest, salt and pepper.

In a separate medium bowl whisk together the plain greek yogurt, avocado oil and eggs.

Pour the wet ingredients into the dry ingredients and mix to combine. Fold in the cooled sautéed shallots then pour into prepared loaf pan, Place in preheated oven and bake for 40 To 45 minutes or until toothpick inserted in the center comes out clean.

Remove from oven and serve warm with fresh whipped butter. Perfect for any brunch table or as a snack. Either way its a delicious treat that I sure you will enjoy.

Caramelized Shallot Herb Bread

Ingredients:

  • 6 To 7 shallots peeled and sliced into thin slices
  • 1 3/4 Cup all purpose flour
  • 1/2 Cup grated Parmesan Cheese
  • 1 Tablespoon granulated sugar
  • 2 Teaspoons chopped fresh thyme
  • 2 Teaspoons chopped fresh rosemary
  • 1 1/2 Teaspoons baking powder
  • 1/4 Teaspoon baking soda
  • 1 Teaspoon fresh lemon zest
  • 1/2 Teaspoon each of salt and pepper
  • 3/4 Cup plain greek yogurt
  • 1/2 Cup avocado oil or vegetable oil
  • 2 Eggs

Instructions:

  1. Place peeled and sliced shallots in a large frying pan over medium heat. Sauté shallots until they have become caramelized. Remove from heat and set to the side to cool.

  5. Pour batter into the prepared loaf pan and spread using a rubber spatula. Place in the preheated oven and bake until golden brown, 40 to 45 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool slightly.
  6. Remove bread from loaf pan and slice. Serve warm with fresh whipped butter.
