Pear Almond Tart

You know when your having company and you want to serve something that will wow your guests? Well these Pear Almond Tarts are what you need for such an occasion. With there sweet, ripe, juicy pears nestled on a flaky crust with chopped almonds in between, they make the perfect end to a meal. Best of all, with a few ingredients on hand, they take just minutes to make.

One thing that I always have on hand is Puff Pastry. I like to always have a package in the freezer so that when I need to make a quick dessert I don’t have to make a special trip to the store. All you have to do is defrost a layer of pastry and then your ready to go.

Preheat oven to 400º. Line a baking sheet with parchment paper and set aside.

On a lightly floured surface slightly roll out your pastry.

Using a 5” bowl as a stencil, cut out as many circles as you can. Place pastry circles on a prepared baking sheet. Take a 4” bowl and center it on one of the pastry circles and press down slightly making sure not to cut through the pastry. All you want to do is make an impression. Brush each circle with melted butter and sprinkle with chopped almonds and 1/2 teaspoon of sugar.

Now for the pears. Because of their sweetness, the Bartlett is the perfect pear for this dessert. They become soft and juicy with a smooth texture when cooked. Just peel, core and cut them in half and place them in a bowl and coat with the juice of a lemon, which will prevent them from browning.

Cut each pear half into slices but keeping each half together.

Arrange sliced pear on the prepared pastry being sure to keep it within the inner circle. Brush pear circles with remaining melted butter, sprinkle with cinnamon and drizzle with honey.

Place in a preheated oven and bake 18 to 20 minutes or until pears are juicy and the crust is golden brown.
