The strawberry flavor is intensified by the addition of freeze dried strawberry dust that is added to the frosting then sprinkled on top for that little added touch.   • I find using a stand mixer is the easiest way to prepare these cupcakes, but if you don’t have a stand mixer then a hand mixer will do.

How To Make Strawberry Cupcakes With Strawberry Frosting

Start by preheating the oven to 350º. Line a mini cupcake tray with paper cupcake liners and set to the side.

Clean and dice strawberries into small pieces and place in a small bowl and set to the side.

Whisk together the all purpose flour, baking powder and salt in a large mixing bowl until combined. Set to the side.

To the bowl of a stand mixer fitted with a paddle attachment, beat the softened butter and granulated sugar until combined.

Add in the egg and vanilla extract and continue mixing until combined.

Pour in half of the dry ingredients and mix until just combined.

Add the plain greek yogurt and mix to combine.

Add the remaining flour and once again mix to combine.

Add the strawberry jam and mix to combine.

Sprinkle flour over the diced strawberries and toss to coat. Using a rubber spatula, gently fold the coated strawberries into the batter unlit combined.

Scoop out dough using a small ice cream scoop and fill each cupcake liner to 3/4 full. Place cupcake tray in the preheated oven and bake for 15 minutes or until toothpick inserted in the center of a cupcake comes out clean. Remove from oven and allow to cool completely on a wire rack.

While the cupcakes are cooling, you can prepare the frosting.

To the bowl of a stand mixer fitted with a paddle attachment, mix together the room temperature butter and cream cheese until combined.

Add the powdered sugar and vanilla extract and mix until combined.

Pour in the freeze dried strawberry powder and continue mixing until smooth and creamy and light pink in color.

Place strawberry frosting in a piping bag fitted with a star tip. Pipe a small swirl on top of each cooled cupcake. Sprinkle the frosted cupcakes with finely chopped freeze dried strawberries then serve.

Ingredients
For The Cupcakes:

  • 2/3 Cup finely diced fresh strawberries

  • 1 3/4 Cup all purpose flour

  • 1 1/4 Teaspoon baking powder

  • 1/4 Teaspoon salt

  • 3/4 Cup granulated sugar

  • 1/2 Cup ( 1 stick )unsalted butter, at room temperature

  • 1 Egg

  • 1 Teaspoon pure vanilla extract

  • 1/2 Cup plain greek yogurt

  • 1/3 Cup strawberry jam

  • For The Strawberry Frosting
  • 1 Cup ( 2 sticks )unsalted butter, at room temperature

  • 6 oz. Cream cheese, at room temperature

  • 3 Cups powdered sugar

  • 1 Teaspoon pure vanilla extract

  • 1/4 Cup freeze dried strawberry powder

Directions

  • Preheat the oven to 350º. Line a mini cupcake tray with paper liners and set to the side.
  • Clean and dice strawberries and place them in a small bowl and set to the side.
  • Whisk together the all purpose flour, baking powder and salt in a large mixing bowl until combined.
  • To the bowl of a stand mixer fitted with a paddle attachment, place the butter and sugar and mix on medium speed until combined. Add the egg and vanilla extract and continue mixing until combined. Add half of the flour mixture to the butter mixture and mix until just combined. Mix in the greek yogurt until incorporated. Add the remaining flour and continue mixing until combined. Mix in the strawberry jam until incorporated.
  • Sprinkle the diced strawberries with 2 tablespoons of flour and toss to coat. Using a rubber spatula, fold strawberries into batter until incorporated.
  • Scoop out batter using a small ice cream scoop and fill each cupcake liner to 3/4 full. Place cupcake tray in the preheated oven and bake for 15 minutes or until toothpick inserted in the center of a cupcake comes out clean. Remove the cupcakes from the oven and allow to cool completely on a wire rack.
  • While the cupcakes are cooling, you can prepare the frosting. To the bowl of a stand mixer fitted with a paddle attachment, mix together the softened cream cheese and butter until smooth.
