Every year come late February and early March I am ready to bid the cold weather goodbye and I start to long for the warmer days of summer. Since I live in an area where summer really dosen’t start to kick in until late May, I have to be a bit more creative, and bring that summer feeling to my home in different ways. One way I accomplish this is by making recipes that make me feel those summer vibes. These Key Lime Pie Cookies definitely do the trick. With the bright tart flavors of the Key Limes, these cookies are like a bite of sunshine wrapped up in a yummy treat.

These Key Lime Pie Cookies are moist and tender and have great Key Lime flavor.

Ingredients

  • 1/2 Cup Brown Sugar

  • 1/4 Cup granulated sugar

  • Zest of three Key Limes

  • 5 Tablespoons unsalted butter, at room temperature

  • 1 1/2 Tablespoons avocado oil

  • 1 Egg

  • 1 Tablespoon Key Lime juice

  • 1 Teaspoon pure vanilla extract

  • 1 1/2 Cups all purpose flour

  • 1 Teaspoon baking powder

  • 1/2 Teaspoon salt

  • 1/3 Cup gram cracker crumbs

  • Cream Topping
  • 6 oz. Cream Cheese

  • 1 Cup heavy whipping cream

  • 1 Cup powdered sugar

  • 2 Teaspoons Key Lime juice

  • Key Lime zest for topping

Directions

  • Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
  • To a large mixing bowl, add the brown sugar, granulated sugar and the zest of 3 Key Limes. Using your fingers, rub the zest into the sugars until thoroughly combined. Add the softened butter and avocado oil and beat using a hand mixer until smooth. Add the egg, 1 tablespoon of key lime juice and the vanilla extract and continue beating until fluffy.
  • To a separate mixing bowl, whisk together the all purpose flour, baking powder and salt until combined. Pour the flour mixture into the butter mixture and beat until just combined.
  • Add gram cracker crumbs to a small bowl. Scoop out cookie dough using a medium sized ice cream scoop. Smooth dough into a ball with your hands then roll the dough ball in the gram cracker crumbs to coat. Place the coated cookies on the prepared baking sheet and bake 10 to 11 minutes or until cookies start to turn golden in color. Remove from oven and allow to cool completely on a wire rack.
  • Meanwhile, to make your cream topping, add the heavy whipping cream and powdered sugar to the bowl of a stand mixer fitted with a whisk attachment. Whisk on high until soft peeks form. Add the very soft cream cheese and key lime juice and continue beating until stiff peeks form.
  • Place whipped topping in a piping bag fitted with a round tip. Pipe the cream on the cooled cookie starting in the center and spiraling around the cookie until it is covered completely. Sprinkle with lime zest and serve.
