Ingredients
1 3/4 Cup graham cracker crumbs
6 Tablespoons unsalted butter, melted
8 oz. Softened cream cheese
1 Can (14 oz.) sweetened condensed milk
4 Egg yolks
1 Tablespoon key lime zest or regular lime zest
1/2 Cup key lime juice
1 Teaspoon pure vanilla extract
Whipped cream for topping
Directions
- Preheat oven to 350º. Line an 8” x 8” baking pan with parchment paper and set to the side.
- Mix graham cracker crumbs with melted butter and firmly press into the bottom of the prepared baking pan. Place in the preheated oven and bake for 10 minutes. Remove from oven and allow to cool.
- Beat the softened cream cheese with the sweetened condensed milk until blended. Add the egg yolks, lime zest, lime juice and vanilla extract and continue beating until smooth.
- Pour filling over cooled crust, place back in the oven and bake an additional 15 to 18 minutes or until set. Remove from oven and allow to cool completely. Once cooled, place in the refrigerator to set for 2 to 4 hours. Remove from the refrigerator, cut into squares and serve with fresh whipped cream and a sprinkling of lime zest.
