  • Preheat oven to 350º. Spray a 9” spring form pan with baking spray and set to the side.
  • To prepare the cake batter, in a large bowl whisk together the flour, baking powder, baking soda and salt together until combined. Set to the side.
  • In the bowl of a stand mixer fitted with a paddle attachment, beat the sugar, almond paste and softened butter at medium high speed until blended together. Add the egg, lemon zest and lemon juice and continue beating until combined. Add the flour mixture and the milk alternately to the almond paste mixture, beginning and ending with the flour mixture until just combined. Fold in the blueberries until incorporated. Set to the side.
  • Prepare the topping by combining the brown sugar, sliced almonds and cinnamon together, add the melted butter and mix to combine.
  • Pour half of the batter into the prepared spring form pan, top with half the topping, then the remaining batter. Sprinkle the top with some extra blueberries then the remaining topping. Place in the preheated oven and bake for 35 to 40 minutes or until toothpick inserted in the center comes out mostly clean. Remove from oven and allow to cool before serving.
