These Flatbreads With Goat Cheese Grilled Peaches and micro greens makes a great appetizer or light meal. It’s perfect in the summer months when peaches are at there sweetest. It’s the ideal mix of sweet and savory all in one bite.
I love making a quick flatbread as a appetizer or as a light meal. They are easy to make and are full of great flavor. Flatbreads can be very versatile as well, like my Blackberry Goat Cheese Flatbread or Flatbread Pizza With Spinach Pesto Roasted Tomatoes & Balsamic Glaze. Since its summer and peaches are at there sweetest I decided to incorporate them in this flatbread, and I must say it was a real hit. Between the sweet grilled peaches, the tangy goat cheese and a bit of freshness from the micro greens it was the perfect combination of sweet and savory all in one bite.
As for the flatbread itself, you can find them in most grocery stores but I like to make my own Flatbreads and when I do make them I always make more than I need. They freeze great, once cooled just place in a re sealable bag between wax paper and store in the freezer. When ready to use just defrost and toast on both sides in a cast iron skillet or just heat them up on the grill.
How To Make Flatbread With Goat Cheese Grilled Peaches & Micro Greens:
I Start by toasting up my flatbreads. Now you can do this straight on the grill or just by placing them in a hot cast iron skillet. I toasted mine on the grill. Once done place them on your serving tray while you prepare the other ingredients.
Place walnuts in a small frying pan over medium heat and cook stirring often until fragrant and slightly toasted. Remove from pan and allow to cool.
Preheat the grill to medium heat.
Slice the peaches into 1/2” wedges and place them in a small bowl. Add lemon juice and toss to coat. Spray the peaches with cooking spray and once again toss to coat.
Place the peaches on the preheated grill and char slightly on both sides. Remove from the grill and set to the side.
While the peaches are cooling slightly rinse and drain the micro greens and spread them over the flatbreads.
Top each flatbread with the cooled grilled peaches, the crumbled goat cheese and the toasted walnuts. Drizzle with balsamic glaze.
They make a great light summer meal or cut into 1/4’s and serve as an appetizer.
Flatbread With Goat Cheese Grilled Peaches & Micro Greens
Ingredients:
- 3 To 4 Flatbreads
- 1 Cup fresh micro greens rinsed and drained
- 4 oz. Goat cheese crumbles
- 4 Ripe Peaches
- 3 to 4 Tablespoons of balsamic glaze
- 1/4 Cup walnuts toasted
- Juice of 1 lemon
Instructions:
- Preheat grill to 300º. Cut peaches into 1/2” slices, coat with lemon juice and toss to coat. Spray the sliced peaches with cooking spray an place on the preheated grill. Char slightly on both sides. Remove from grill and allow to cool slightly.
- Meanwhile place walnuts in a small frying pan on medium heat. Stirring often, cook walnuts until fragrant and slightly toasted. Remove from pan and allow to cool slightly.
- Now toast the flatbreads on the grill or in a hot cast iron skillet. Place toasted flatbreads on a serving tray, top with micro greens, cooled peaches, crumbled goat cheese and toasted walnuts. Drizzle the tops with a balsamic glaze and serve.
