I love a dish that is quick and easy and full of flavor, especially when I’m having company. I don’t want to spend a ton of time in the kitchen preparing. I rather be sitting with my guests enjoying. That’s why I love to serve this dish. It is so easy to prepare and so full of great flavor. This is a great dish for the summer months, when the tomatoes are at there sweetest. I love picking them right off the vine and putting them in salads, using them for bruschetta or roasting them. They make such a great addition to any meal.

How To Make Roasted Tomatoes With Burrata, Micro Greens & Charred Baguettes

Preheat the oven to 350º

Rinse and drain the tomatoes and place them in a large casserole dish. Using a sharp knife, puncture each tomato. You do this so that when the tomatoes are cooking they don’t burst in the oven. Trust me this is an important step, I learned the hard way. Coat the tomatoes with olive oil. To the tomatoes add the whole garlic cloves, fresh thyme, sliced shallot, salt and pepper and mix to combine. Place in the preheated oven and bake for 30 to 40 minutes or until tomatoes start to char

Remove the tomatoes from the oven and with a fork, mash the garlic cloves. Gently mix everything together and pour into a serving bowl.

Cut a baguette on an angle into 1/2” thick slices. Place on the grill or in the oven on broil to char, being careful not to burn them. Once they have a slight char on both sides, remove them from the grill and rub a fresh peeled garlic clove over each baguette while it is still warm.

Top roasted tomatoes with Burrata and some micro greens and drizzle with olive oil. Serve with charred baguette.

Roasted Tomatoes With Burrata, Micro Greens & Charred Baguettes

Ingredients:

  • 16 oz. Container of grape tomatoes
  • 1 To 2 Tablespoons olive oil
  • 4 Cloves fresh peeled garlic
  • 1 Large shallot thinly sliced
  • 2 Teaspoons fresh thyme
  • Pinch of salt and pepper
  • 1 Ball of burrata
  • 1 Small bunch of micro greens or basil if you prefer
  • 1 Baguette sliced on an angle into 1/2” slices

Instructions:

  1. Preheat the oven to 350º.
  2. Rinse and drain the tomatoes and place them in a large casserole dish. Puncture each tomato with a sharp knife to avoid them bursting in the oven. Add the garlic cloves, sliced shallots, thyme, salt and pepper. Drizzle with olive oil and mix to coat. Place in preheated oven and bake for 30 to 40 minutes or until tomatoes start to char slightly. Remove from oven, mash garlic cloves with a fork and mix to incorporate. Pour tomatoes into a serving dish and top with burrata and micro greens and drizzle with olive oil.
  3. Place slices of baguette on the grill or in the oven on broil, keeping your eyes on them to make sure they do not burn. Once they start to char, rotate them so that they char on the other side also. Remove the slices from the grill and rub each one with a fresh peeled clove of garlic. Place them next to the roasted tomatoes and serve.
