Ingredients
1/4 Cup unsalted butter, softened
1/4 Cup Avocado Oil
1/4 Cup Granulated Sugar
1/4 Cup Brown Sugar
1 Teaspoon baking powder
1/4 Teaspoon salt
1 Egg
1 Teaspoon Pure Vanilla Extract
2 Cups All Purpose Flour
1/3 Cup seedless Raspberry Preserves
Directions
- Preheat oven to 375º. Line a baking sheet with parchment paper and set to the side.
- To a large mixing bowl, beat the butter and oil with an electric mixer until combined, about 30 seconds. Add the granulated sugar, brown sugar, baking powder and salt and continue beating until combined, scraping the sides of the bowl if necessary. Beat in the egg and vanilla extract until combined. Add the flour and beat until dough comes together.
- Scoop out dough into 1” balls. Place two balls of dough together ( making sure that they are touching ) on the prepared baking sheet. Using your thumbs, make an indentation in the center of each ball. Pinch the bottom of the cookie to form a heart shape. Repeat with the remaining dough, spacing the cookies 2” apart on the baking sheet.
- Place in the preheated oven and bake for 8 to 10 minutes or until edges have become lightly browned. Remove from the oven and place on a wire rack to cool slightly. Fill each indentation with raspberry preserves then allow cookies to cool completely and serve.
