In my world, store bought granola just doesn’t add up to homemade granola. When I think of granola, I think of a healthy snack to get me through my day. Whether it be in the morning served with milk, as a yogurt topper for a great mid morning snack or just as is for that on the go midday pick me up to hold me over until dinner. Either way, I want it to be a healthy addition to my diet. Something without all the added preservatives and ingredients I can’t even pronounce. What You Need To Make This Granola

Equipment:

  • Mixing Bowls: When making granola I like to use a large mixing bowl, giving me the room to toss my ingredients together without making a mess.
  • Parchment Paper Sheets: Perfect for lining your baking sheet. They will prevent sticking and allow for an easy clean up.
  • Baking Sheets: I like using a large baking sheet so that I am able to spread out the granola into a thin layer. This will allow it to crisp up and form those crunchy clusters.

Ingredients:

  • Coconut Oil: Using coconut oil will help crisp up your granola while adding a bit of flavor as well.
  • Vanilla Extract: I always opt for Pure Vanilla Extract due to its intense vanilla flavor.
  • Bittersweet Chocolate Chunks: Place the warm crunchy clusters on top of those bittersweet chocolate chunks and let sit until chocolate melts then toss to coat.

Crunchy chocolate clusters that are perfectly served for breakfast,as a yogurt topper for a mid morning snack or just as is as a late day treat. No matter how you eat them you will be sure to enjoy this crunchy treat.

Ingredients

Directions

  • Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
  • In a large mixing bowl, mix together the oats, almond flour, sliced almonds, cocoa powder, espresso powder, cinnamon and salt until combined. Set to the side.
  • In a small saucepan set over medium heat, mix the coconut oil, brown sugar and maple syrup and cook until melted and completely combined. Remove from heat. Add the vanilla extract and stir to combine. Pour mixture over the rolled oats mixture and mix together incorporate.
  • Pour out mixture onto the prepared baking sheet and spread out. Press down to flatten with the back of a silicone spatula to compact. Place in the preheated oven and bake for 30 minutes, rotating the pan half way through baking. Remove from oven and allow to cool for 5 minutes.
  • Break up the sheet of granola into chunks then place them back on the baking sheet in a single layer. Return to oven and bake an additional 5 minutes.
  • Place the bittersweet chocolate chips in a large bowl. Remove the granola from the oven and immediately pour over the chocolate chips and toss to coat. Pour back onto the parchment lined baking sheet and allow to cool completely before storing in an air tight container.
  • Enjoy.
