Ok, I have to admit, I have been eating way too much granola lately. Whether it be as a crunchy topping for my yogurt or just by the handful, as a satisfying snack. It has definitely been a big part of my routine lately. But of course, it has to be homemade. There is nothing like homemade granola, its super crunchy texture and intense flavors are the perfect way to ease any cravings.
Now I have made my fare share of different flavors but I will say that this Blueberry Muffins Granola is right up there with the best of them. The clusters are sweet but not overly sweet like some store bought granolas and it is perfectly flavored with dried blueberries and rich almond, making it the perfect snack for anytime of day.

- Large Mixing Bowl: Love preparing granola in a large ceramic mixing bowl as to not make a mess while mixing.
- Parchment Paper Sheets: Perfect for lining your baking sheets. They will prevent sticking and allow for an easy clean up.
- Baking Sheet: I like to use a large baking sheets so that I am able to spread out the granola into a thin layer. This will allow it to crisp up and form those crunchy clusters.
Ingredients:
- Oats: This recipe calls for Old Fashion Rolled Oats.
- Almond Flour: Used to bind the ingredients together to form those crunchy clusters.
- Diced Almonds: For added crunch.
- Unsweetened Shredded Coconut: For added sweetness, texture and delicious coconut flavor.
- Unsweetened Dried Blueberries: For this recipe I used unsweetened dried blueberries but if you are looking for a bit more sweetness in your granola then you can use Sweetened Dried Blueberries.
- Spices: Both Ground Cinnamon and Ground Nutmeg are added to give this granola warmth.
- Salt: A pinch of salt is added to enhance the flavors in this recipe.
- Sweetener: This granola is sweetened with both Dark Brown Sugar and Pure Maple syrup. Both for added sweetness and texture.
- Coconut Oil: Using coconut oil helps develop those crunchy clusters while adding a mild coconut flavor.

Ingredients
3 Cups Old Fashion Rolled Oats
1/2 Cup Almond Flour
1 1/2 Cups Chopped Almonds
1 Teaspoon Ground Cinnamon
1/4 Teaspoon Ground Nutmeg
1/2 Teaspoon salt
1/3 Cup Dark Brown Sugar
1/3 Cup Coconut Oil
1/3 Cup Pure Maple Syrup
1 Teaspoon Pure Vanilla Extract
1/2 Teaspoon Almond Extract
Directions
- Preheat oven to 350°. Line of baking sheet with parchment paper and set to the side.
- In a large mixing bowl, mix the oats, almond flour, chopped almonds, shredded coconut, blueberries, cinnamon, nutmeg, and salt until combined.
- Place the brown sugar, coconut oil, and maple syrup in a small sauce pan set over medium heat. Let the mixture melt and come together. Remove from heat then stir in the vanilla and almond extracts. Pour the mixture over the oats and mix until completely coated.
- Pour the oat mixture onto the prepared, baking sheet and press down, using the back of a rubber spatula to compact the ingredients together.
- Place in the preheated oven and bake for 30 minutes, rotating the pan halfway through baking. Remove from oven and allowed to cool for five minutes on the counter. Break up the sheet of cooled granola into chunks. Place the granola back on the baking sheet, then return to the oven to bake for an additional five minutes. Remove from oven and allow to cool completely before serving.
