Ingredients
1/4 Cup bittersweet chocolate, melted and cooled
1/2 Cup unsalted butter, softened
3/4 Cup brown sugar
1/4 Cup granulated sugar
1 Egg
2 Teaspoons pure vanilla extract
1 1/2 Cups all purpose flour
1/3 Cup unsweetened cocoa powder
1/2 Teaspoon baking soda
1/2 Teaspoon baking powder
1/4 Teaspoon salt
1/2 Teaspoon espresso powder
1 Cup freeze dried strawberries, crushes
1 Cup semi sweet chocolate chips
Dove dark chocolate hearts
Directions
- Place 1/4 cup of bittersweet chocolate chips into a microwave safe bowl. Microwave in 30 second intervals until melted. Set to the side to cool.
- Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side
- To a large mixing bowl, beat the butter, brown sugar and granulated sugar until smooth. Add the egg and vanilla and continue beating until light and fluffy. Add the melted chocolate and beat until combined. Set to the side.
- To a large mixing bowl, whisk together the all purpose flour, cocoa powder, baking soda, baking powder, espresso powder and salt until combined. Pour into the wet ingredients and mix together to combine. Fold in the freeze dried strawberries and semi sweet chocolate chips until completely combined.
- Scoop out dough using a medium sized ice cream scoop. Place the cookie dough balls on the prepared baking sheet, leaving 2” between each cookie. Place in the preheated oven and bake for 10 to 12 minutes or until edges are slightly firm,.
- Remove from oven and immediately top each cookie with a dark chocolate heart. Place on a wire rack to cool.
