Ingredients

  • For The Bread
  • 2 Cups All Purpose Flour

  • 3/4 Teaspoon baking soda

  • 1/2 Teaspoon baking powder

  • 1 Teaspoon Ground Cinnamon

  • 1/2 Teaspoon salt

  • 3/4 Cup (1 & 1/2 stick) unsalted butter, browned

  • 1 Cup Granulated Sugar

  • 2 Eggs

  • 2 Teaspoons Pure Vanilla Extract

  • 1/2 Cup plain greek yogurt, full or less fat

  • 3 Medium very ripe bananas

  • For The Streusel Topping
  • 1/2 Cup Walnuts, chopped

  • 1/2 Cup all purpose flour

  • 1/4 Cup Dark Brown Sugar

  • 1/2 Teaspoon ground cinnamon

  • 4 Tablespoons of unsalted butter, melted

  • For The Rum Sauce
  • 3 Tablespoons heavy whipping cream

  • 3 Tablespoons dark brown sugar

  • 3 Tablespoons unsalted butter

  • 1 1/2 Tablespoons Dark Rum

Directions

  • For The Bread
  • Preheat oven to 350º. Spray a 9” x 5” loaf pan with baking spray and set to the side.
  • Place butter in a small saucepan set over medium heat and cook stirring occasionally until liquid turns golden and brown bits form at the bottom of the pan. Pour into a heatproof bowl, being sure to include all the brown bits. Add the sugar and beat with a hand mixer to combine. Add the eggs, vanilla, yogurt and mashed bananas and continue beating until incorporated.
  • In a separate large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon and salt until combined. Set to the side. Pour into the wet ingredients and mix until incorporated. Set to the side.
  • For The Walnut Streusel
  • Place the chopped walnuts, flour, brown sugar and cinnamon in a medium sized mixing bowl. Pour in the melted butter and mix together with a fork to form a crumble.
  • Place the loaf pan on a baking tray. Sprinkle the top with the walnut streusel then place in the oven to bake for 50 to 55 minutes or until a toothpick inserted in the center comes out clean.
    Remove from oven and allow to cool.
  • For The Rum Sauce
  • Place butter and brown sugar in a large frying pan set over medium heat and cook stirring occasionally until butter and sugar melt together. Add the heavy whipping cream and continue cooking until smooth. Add the rum and cook an additional 2 to 3 minutes to cook out the alcohol.
  • Remove from heat then pour rum sauce over the cooled banana bread. Allow rum sauce to set slightly before serving.
  • Enjoy.
