We buy a lot of bananas, so every now and then its bound to happen that we have a few left over that start to look less then perfect, ( the best way to eat them by the way ). Sometimes we freeze them for smoothies or I use them for my banana granola, but the best way to utilize these bananas is with banana bread or banana muffins. These aren’t any old banana muffins though. The chocolate chips give them that little sweetness and that cream cheese swirl center, well that takes them to a whole new level.
These muffins not only have that cream cheesy goodness on top, there is also a good dollop of cream cheese in the center, yum!! They are really moist and have a super banana flavor. Another words, they’re perfect!!!
Preheat oven to 350º. Line two six cup muffin tins with paper liners and set aside.
To a large mixing bowl add all purpose flour, my favorite is King Arthur’s. I have used others but I always come back to King Arthur. They make a great product.
To your flour add baking powder, baking soda and salt and whisk to combine.
Place bananas on a dish and mash up with a fork. Place in a medium size bowl.
To the bananas add both sugars, oil, egg and vanilla extract, whisk till combines. Slowly mix in the flour mixture.
Fold in the chocolate chips and set aside.
In a separate bowl beat cream cheese until smooth. Add sugar, egg yolk, milk and vanilla extract and continue beating until completely combined.
Place a small scoop of batter in each liner. Add a dollop of cream cheese mixture to each liner then cover with another scoop of batter and another dollop of cream cheese mixture. Using a tooth pick swirl the cream cheese topping around once or twice. Place muffin tins in oven and bake for 15 to 20 minutes or until toothpick inserted in the center comes out clean. Then serve.
Banana Chocolate Chip Cream Cheese Muffins
Ingredients:
Muffins:
- 2 Cups all purpose flour
- 1 Teaspoon baking powder
- 1 Teaspoon baking soda
- 1/2 Teaspoon salt
- 1/2 Cup granulated sugar
- 1/2 Cup brown sugar
- 1 Large egg
- 4 Very ripe bananas mashed
- 1/4 Cup vegetable oil
- 2 Teaspoons pure vanilla extract
- 1/2 Cup bittersweet chocolate chips
Cream Cheese Filling:
- 8 Ounces softened cream cheese
- 2 Tablespoons granulated sugar
- 1 Egg yolk
- 1 Tablespoon milk
- 2 Teaspoons pure vanilla extract
Instructions:
- Preheat oven to 350º. Line 2, six cup muffin tins with paper liners, set aside.
- In a large mixing bowl whisk together all purpose flour, baking powder, baking soda and salt. Set aside.
- To a separate bowl add bananas, both sugars, oil, eggs and vanilla extract, stir to combine. Slowly add the flour mixture until incorporated. Fold in chocolate chips. Set aside.
- In a separate bowl beat cream cheese, sugar, yolk, milk and vanilla. Beat until fluffy.
- To your muffin liners add a small scoop of batter followed by a small dollop of cream cheese followed by another small scoop of batter and then topped with another dollop of cream cheese. Swirl the cream cheese once or twice using a toothpick.
- Place muffin tins in the preheated oven and bake for 15 to 20 minutes or until a toothpick inserted in the middle comes out clean.
