Gorgonzola Pear Toast

When I am having a get together, I want to serve easy to prepare tasty food. If I can prep anything the day before, even better. If I am having people over, I actually want to spend time with them, not stuck in the kitchen preparing food then serving it. I would like to enjoy the food with my guest.

That’s why I love Gorgonzola Pear Toast, they hit every requirement. They are visually appealing, easy to prepare and most importantly they taste great. The best part is you can do a bit of preparation the day before. How great is that?

There are two things you can do the day before your get together to prepare. The first one being is to candy the nuts. Now you can buy candied pecans at the store but if you are interested in making them yourself its pretty easy.

Candied Pecans:

Ingredients:

  1. 1/4 Cup granulated sugar
  2. 1/2 Cup chopped pecans

Instructions:

  1. Place granulated sugar in a non stick medium frying pan and place on medium high heat until sugar is completely dissolved. Place pecans in the sugar syrup and stir to coat with a wooden spoon. Be careful, they can burn quickly. Once coated remove from pan immediately and place on a sheet of aluminum foil.

The second thing you can do is prepare your cream. Supper easy. Just add the cream cheese and Gorgonzola cheese to the bowl of a small food processor and pulse until completely combined. Store cream in an airtight container in the refrigerator over night.

Next day, slice your baguette on an angle into 1/4” slices brush with olive oil and toast on both sides. Spread cream on all the toast. Slice caned pears half’s into slices. Place one slice of pear on each slice of toast and top with 1 or 2 candied pecans. Place on a serving tray and sprinkle the top with chopped chives, then serve.

Gorgonzola Pear Toast

Ingredients:

  • 1 Baguette sliced into 1/4” slices on an angle
  • 2 Tablespoons olive oil
  • 8oz. Package cream cheese
  • 4oz. Crumbled Gorgonzola cheese
  • 2 Cans of pear halves
  • Candied pecans store bought or recipe above
  • 2 Tablespoon chopped chives

Instructions:

  1. Place baguette slices on a sheet pan, brush with olive oil and place in the oven on broil for 2 minutes or until slightly browned. Flip slices of baguette and toast again until slightly browned on other side. Remove from oven and let cool.
  2. To the bowl of a mini food processor, add cream cheese and Gorgonzola cheese and blend until completely combined. Spread on cooled toast.
  3. Slice pear halves into slices and place on toast. Top with 1 or 2 candied pecans and sprinkle with chopped chives.
  4. Enjoy
