Every week I buy a ton of bananas. Who doesn’t love them? A sweet portable snack, that is super versatile and can be used in a variety of ways. Weather it be in smoothies, pancakes, muffins, breads and even granola. That’s right, I said granola. When you think of granola, you don’t think banana, right? Well then you’ve been missing out. This granola is like banana bread with a crunch. It’s the perfect ways to start your day or even as a mid day snack. It’s super easy to make and has tons of health benefits. So give it a try, I’m sure you will love it.
To start, pre heat your oven to 350º. Place coconut oil and maple syrup in a small saucepan on the stove over medium heat and cook until coconut oil has melted. Set aside.
Place bananas on a plate and mash with a fork.
Pour mashed banana into coconut oil mixture and stir to combine.
In a large mixing bowl place oats, sugar, ground flaxseed, nuts, cinnamon and salt. Stir until completely combined.
Pour banana mixture into the oat mixture and stir to combine.
Place mixture on a parchment lined baking sheet and press down.
Place in the pre heated oven and cook without moving for 25 to 30 minutes or until golden brown. Remove from heat and let cool. Once cooled place in a air tight container to store.
Banana Bread Granola
Ingredients:
- 1/4 Cup Coconut oil
- 1/3 Cup pure maple syrup
- 1 Medium ripe banana
- 3 Cups old fashion oats
- 3 Tablespoons brown sugar
- 1/3 Cup ground flax seed
- 3/4 Cup chopped walnuts
- 1/2 Cup chopped pecans
- 2 Teaspoons cinnamon
- 1/2 Teaspoon salt
- 1 Teaspoon pure vanilla extract
Instructions:
Pre heat oven to 350º. Line a baking sheet with parchment paper and set aside.
In a large mixing bowl place oats, brown sugar, ground flax seed, chopped walnuts, chopped pecans, cinnamon, salt and vanilla extract, mix well to combine.
In a small saucepan over medium heat cook coconut oil and maple syrup until completely melted.
Peel a ripe banana, place on a plate and mash with a fork. Pour mashed banana into melted coconut oil mixture and mix to combine.
Pour banana coconut mixture into oat mixture and mix well. Spread mixture evenly onto prepared baking sheet and flatten. Use two baking sheets if necessary. Bake in pre heated oven without turning for 25 to 30 minutes or until golden brown.
Remove from oven and let cool. Once cooled place in an airtight container to store.
