These Baked Matcha Donuts With Brown Butter Matcha Glaze are the perfect treat. They are light and tender and have deep matcha flavor. Best of all, since they are baked, they are really easy to make.
For those of you who don’t know, Matcha is a powder made from finely ground tea leaves. It is used around the world in beverages like tea’s and lattes and has become a popular ingredient in such things as ice creams and baked goods. Matcha has a mellow earthy flavor with a natural sweet nuttiness that pairs well with desserts.

Now I know what you’re thinking, “ Donuts are fried not baked “. Yes, traditional donuts are fried, and don’t get me wrong, they are quite good. But I find that baking donuts is a great way to make a healthier alternative to the traditional donut. Baked donuts still have all the great taste of traditional fried donuts but without all extra unhealthy fat.
These Matcha Donuts are soft and tender and have great Matcha flavor on their own but I didn’t want to stop there. I wanted to make a glaze that would complement that sweet nutty flavor. That’s when I thought a Brown Butter Matcha Glaze would be the perfect fit.
Matcha Donut Ingredients:
- All Purpose Flour:
- Matcha Powder:
- Ground Cinnamon:
- Salt:
- Baking Powder:
- Granulated Sugar:
- Unsalted Butter:
- Avocado Oil:
- Egg:
- Pure Vanilla Extract:
- Milk:
- Powdered Sugar:
- Unsalted Brown Butter:
- Shaved Dark Chocolate: For decoration
- Freeze Dried Strawberries: For decoration
Tips For Making Baked Donuts:
- Spray the donut pan with baking spray to prevent the donuts from sticking.
- Fill the donut pans with a piping bag. If you do not have a piping bag, you can use a ziplock bag. Just snip a small piece off a corner and squeeze the batter out into the pan.
- To make sure donuts are cooked, just lightly press the tops with your fingers. If it bounces back they are done.

How To Bake Matcha Donuts With Brown Butter Matcha Glaze
Preheat oven to 350º. Spray the wells of a donut tray with baking spray and set to the side.
In a large mixing bowl, whisk together the flour, matcha powder, ground cinnamon, baking powder and salt until combined.
To a separate medium sized mixing bowl, whisk together the granulated sugar, avocado oil, melted butter, egg, pure vanilla extract and milk until completely combined.
Pour the wet ingredients into the dry ingredients and using a rubber spatula, fold in to combine.
Place the batter into a piping bag and cut off the tip. Pipe the batter into the wells of the prepared donut tray. Place in the preheated oven and allow to bake for 13 to 14 minutes or until when gently pressed on, they bounce back. Remove from oven and allow to cool completely on a wire rack.
While the donuts are cooling, you can make your glaze. To a small mixing bowl whisk together the matcha powder, powdered sugar, brown butter, pure vanilla extract and milk until smooth and creamy.
Dip the tops of each donut in the glaze. Immediately sprinkle the tops of each donut with the topping of your choice. I used shaved dark chocolate and crushed freeze dried strawberries. Place on a wire rack to set, then serve.

Ingredients:
For The Donut
- 1 1/4 Cup all purpose flour
- 1 Tablespoon matcha powder
- 1/2 Teaspoon ground cinnamon
- 3/4 Teaspoon baking powder
- 1/4 Teaspoon salt
- 1/3 Cup granulated sugar
- 1/4 Cup avocado oil
- 4 Tablespoons unsalted butter, melted
- 1 Egg
- 1 Teaspoon pure vanilla extract
- 1/4 Cup milk
For The Glaze:
- 1 Tablespoon matcha
- 1 Cup powdered sugar
- 3 Tablespoons brown butter
- 1/2 Teaspoon pure vanilla extract
- 2 Tablespoons milk
Instructions:
To Make The Donuts:
- Preheat oven to 350º. Spray a donut baking tray with baking spray and set to the side.
- To a large mixing bowl, whisk together the all purpose flour, matcha powder, ground cinnamon, baking powder and salt until combined
- To a separate medium mixing bowl, whisk together the granulated sugar, avocado oil, melted butter, egg, pure vanilla extract and milk until completely combined
- Pour the wet ingredients into the dry ingredients and using a rubber spatula, mix to combine.
- Place batter into a piping bag and pipe into prepared donut pan to 3/4 full. Place in preheated oven and bake for 13 to 14 minutes or bounces back when gently pressed on. Remove from oven and allow to cool slightly before removing from tray. Once slightly cooled, remove them from the tray and cool completely on a wire rack.
- Once donuts are completely cooled, dip the tops of each donut into the prepared glaze and immediately sprinkle with desired topping.
- Enjoy.
To Make The Glaze:
- Place butter in a small saucepan over medium low heat for 8 to 10 minutes occasionally stirring, until brown bits start to form on the bottom and butter has become golden. Remove from stove and allow to cool.
- To a small mixing bowl, whisk together the matcha powder, powdered sugar, cooled brown butter, vanilla extract and milk until smooth and creamy.
- Immediately glaze donuts and sprinkle with desired topping.
