Coconut Almond Bites

Ingredients Needed To Make Coconut Almond Bites

  • Shredded Coconut: Coconut is a great source of dietary fiber. It is good for heart health and is said to improve HDL Cholesterol.
  • Raw Almonds: Contain lots of healthy fats. They are high in fiber and rich in protein. They are thought to lower blood sugar levels and also reduce blood pressure.
  • Unsweetened Cocoa Powder: Has been said to reduce inflammation, lower blood pressure and cholesterol levels.
  • Medjool Dates: Are a good source of potassium and add a natural sweetness to recipes.
  • Pure Vanilla Extract: Adds great flavor
  • Salt: Will help enhance the flavors of the other ingredients.

Coconut Almond Bites

Ingredients:

  • 1 Cup shredded coconut
  • 1 Cup raw almonds
  • 1/3 Cup unsweetened cocoa powder
  • 20 Large Medjool dates, pitted
  • 1/2 Teaspoon pure vanilla extract
  • Pinch of salt
  • Shredded coconut for coating

Instructions:

  1. Place dates in a bowl, cover with boiling water and let sit for 5 minutes. Drain dates, reserving the water.
  2. To the bowl of a food processor, add the 1 cup of shredded coconut, almonds, cocoa powder, drained dates, vanilla extract and salt. Pulse several times until combined.
  3. Add 1 to 2 tablespoons of reserved date water and pulse several times until mixture holds together when pinched
  4. Scoop out mixture using a small ice cream scoop. Roll mixture in between your hands to form a smooth ball. Dip into shredded coconut to coat. If coconut doesn’t stick, then dip the balls into the reserved date water first then dip into shredded coconut.
  5. Store in a air tight container in the refrigerator for up to one week.
  6. Enjoy.
