If your house is anything like mine, then you are sure to have a couple of ripe bananas left every now and then. We buy a ton of bananas, and most of the time they are devoured before the next shopping trip, but every once in a while there are two or three bananas that don’t get eaten and start to develop those ugly brown spots. Now to me, that’s the best way to eat them. When bananas start to get those spots, they are at there sweetest. Now of course there is a point of no return, at that point, sad to say they become food for the garbage. Now normally before this happens I will either use them to bake something like a Banana Bread or I will just peel them, place them on a plate and freeze them for smoothies. Now having our fair share of frozen bananas in the freezer, I decided, with the extra bananas I had, I was going to bake something. Normally I would go right for Banana Bread, but this week I was feeling a little sassy. I wanted to change it up a bit. That is when these donuts came to mind and I must say I’m glad they did. These donuts were moist and tender and had great flavor. Needless to say they were a big hit.

  • Brown Butter: To me Brown Butter is like liquid gold. It adds a rich nuttiness to all your recipes.

  • Bananas: Very ripe. You know the ones that everyone leaves behind because they think that they are no longer good.
  • Vanilla Extract: I like to use Pure Vanilla Extract rather than Imitation Vanilla extract. It’s a bit more expensive but well worth the cost.

Tips For Making These Donuts

  • Filling The Donut Tray: Normally when baking something like a cake or cup cake I would say to fill the pan to 3/4 full but for these donuts you must fill each donut cavity to the top. This will ensure that you get a nice full donut.
  • Prepping The Donut Tray: Make sure that you spray each donut tray with baking spray. This way your donuts will pop right out when they are done.
  • Filling With Batter:I find it much easier to fill the donut tray with a piping bag. If you don’t have a piping bag then a zip lock bag with a corner cut off will work as well.
  • Room Temp Ingredients: Alway keep your ingredients at room temperature. This will allow them to combine easily.
  • Toppings: Have your toppings prepared ahead of time. Glaze your chopped walnuts and chop up your banana chips. You want to apply them right after you dip the donuts in the glaze so that they stick.

How To Store These Donuts

Now fresh baked items are usually best when eaten right away, but there is a chance that there will be some left over. It is best to keep left overs in an air tight container for a day or two on the counter. If you need to store them for a longer period of time then you can place them in the freezer for up to three months.

These Baked Brown Butter Banana Walnut Donuts are soft and tender and full of great Banana flavor

Ingredients

  • For The Donut
  • 1/2 Cup granulated sugar

  • 2 Eggs

  • 2 Very ripe medium bananas, mashed

  • 4 Tablespoons unsalted butter, browned

  • 2 Teaspoons pure vanilla extract

  • 1 1/2 Cup all purpose flour

  • 2 Teaspoons ground cinnamon

  • 1 Teaspoon salt

  • 1 Teaspoon baking powder

  • Brown Butter Glaze
  • 1 Cup powdered sugar

  • 1/4 Cup unsalted butter browned

  • 2 to 3 Tablespoons milk

  • Toppings:
  • 1/2 Cup chopped walnuts

  • 2 Tablespoons pure maple syrup

  • 1/4 Cup banana chips chopped into small pieces

Directions

  • Start by preparing the toppings for your donuts. Place maple syrup and walnuts in a frying pan over medium heat. Allow walnuts to cook until syrup has crystalized on the nuts. Remove from pan and place on a sheet of aluminum to cool. Chop banana chips into small pieces, place in a bowl and set to the side.
  • Preheat the oven to 350º. Spray the wells of a donut baking pan with baking spray and set to the side.
  • To make the donuts, start by browning your butter. To a small saucepan over medium low heat, add the 4 tablespoons of butter. Cook for 8 to 10 minutes stirring occasionally until liquid has turned a golden color and brown bits have formed at the bottom of the pan. Pour the browned butter, brown bits and anll into a large mixing bowl along with the granulated sugar and beat with a hand mixer until combined. Add the eggs, bananas and vanilla extract and continue beating until smooth.
  • To a separate mixing bowl whisk together the flour, baking powder, salt and cinnamon. Add the flour mixture to the banana mixture and mix until just combined. Spoon batter into a piping bag then fill each section of the donut tray to the top with the prepared batter. Place in the preheated oven and bake for 15 to 18 minutes or until they bounce back when pressed on. Remove from oven and allow to cool completely on a wire rack.
  • While your donuts are cooling, you can prepare your brown butter glaze. Once again to a small saucepan over medium low heat, add the 1/4 cup of butter and cook for 8 to 10 minutes stirring occasionally until the liquid has turned a golden color and brown bits have formed at the bottom of the pan. Pour the browned butter into a small mixing bowls along with the powdered sugar and 2 tablespoons of milk. Stir until the mixture is smooth and silky.
  • Dip one side of each donut into the glaze and place back on the wire rack. Sprinkle each donut with the prepared walnuts and banana chips and let sit until set, then serve.
