Apple Galette

This Apple Galette is the perfect way to have an apple pie without all the fuss. It has a buttery flaky crust that holds sweet and perfectly spiced apples. Served warm with vanilla ice cream, and you have the perfect dessert that anyone would enjoy.

Apple Galette is a French name for a Rustic Apple Tart. Essentially its a Apple Pie that is lacking all the fuss. The crust is free formed around the apples, which makes it much easier to prepare. It is the perfect dessert when you don’t have a lot of time to make something fancy.

It all starts with a Basic Pie Crust. Really just 5 ingredients. All purpose flour, butter, sugar, salt and water. Now I know your probably saying “ What about the lard, how can you have a flaky crust without it “ my answer is, you don’t need it. I have managed to make a buttery flaky crust with just butter. The key to getting a flaky crust is to make sure your ingredients are very cold.

How To Make A Basic Pie Crust:

I start by cutting my butter into little cubes. Then I place the cubes in the freezer while I prepare the crust. I cut the butter ahead of time because when you handle the butter the heat from your hands will start to melt it, so it goes from the freezer right into the food processor. No handling it before processing, just ice cold butter.

To the bowl of a food processor I add the flour, sugar and salt and pulse until combined.

I remove the cubed butter from the freezer and scatter it in the food processor. I pulse to combine until a corse meal has formed.

I pour 3 to 4 tablespoons of ice water into the food processor shoot one at a time and pulsing in between each addition.

I remove the pie dough from the processor and wrap it tightly in plastic wrap and place it in the refrigerator until I am ready to roll it out.

How To Make The Apple Galette

Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.

My favorite apple to use for this recipe is a Fuji Apple. They are perfectly sweet and hold there shape once cooked.

Peel and slice the apples into 1/4” thick slices and place them in a large bowl. Sprinkle the apples with some fresh squeezed lemon juice and toss to coat.

Add the granulated sugar, pure vanilla extract, ground cinnamon, fresh ground nutmeg and a pinch of salt. Toss apples using a wooden spoon until completely combined and all the apples are coated. Set to the side.

Remove the pie crust from the refrigerator and let sit on the counter for 10 minutes or until easy to handle.

Lightly flour your work surface and rolling pin. Remove pie crust from the plastic wrap and place on the floured surface. Roll dough out to approximately 15” round. Roll flat dough onto rolling pin to transport it to the center of the prepared baking sheet. Once dough is flat, arrange the apples on top in a circle. The apples can also just be poured on top, don’t worry it will taste the same. Fold remaining dough over apples. Brush dough with egg wash ( and egg scrambled with water ) and place in the preheated oven for baking 45 to 50 minutes or until crust is golden brown and apples are tender.

Remove from oven and serve immediately with some vanilla ice cream.

Basic Pie Crust

Ingredients:

  • 1 1/2 Cups all purpose flour
  • 1 Tablespoon granulated sugar
  • 1/2 Teaspoon salt
  • 9 Tablespoons very cold butter cut into cubes
  • 3 To 4 tablespoons cold water

Instructions:

  1. Cut butter into small cubes and place in the freezer.
  2. To the bowl of a food processor add the flour sugar and salt and pulse to combine. Remove butter from the freezer and scatter it into the food processor. Pulse flour and butter combo until a course meal forms. Pour 1 tablespoon at a time of ice cold water into food processor and pulse after each addition. When dough holds together when pinched, it is done.
  3. Remove dough from processor and place on a sheet of plastic wrap. Using the ends of the plastic wrap, press the dough together to form a disk. Wrap tightly in plastic wrap and place in the refrigerator for 30 minutes to cool
  4. Remove from refrigerator and roll out as desired.

Apple Galette

Ingredients:

  • 1 Basic pie Crust, recipe above or store bought
  • 7 To 8 Fuji Apples peeled and sliced into 1/4” slices
  • 1 Tablespoon lemon juice
  • 1/2 Cup granulated sugar
  • 1 Teaspoon pure vanilla extract
  • 1 1/2 Teaspoon ground cinnamon
  • 1/4 Teaspoon fresh ground nutmeg
  • 1/4 Teaspoon salt
  • 1 Egg
  • 1 Tablespoon water

Instructions:

  1. Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
  2. Place your peeled and sliced apples into a large bowl along with the lemon juice and toss to coat. Add the granulated sugar, vanilla extract, ground cinnamon, nutmeg and salt and toss to combine.
  3. Roll out your basic pie crust on a lightly floured surface. Place rolled out pie crust on your prepared baking sheet. Arrange the apples in the center of the pie crust. Fold extra pie crust up onto the apples.
  4. Place the egg in a small bowl with the tablespoon of water. Scramble together to form a egg wash. Coat crust with egg wash using a pastry brush and place in the preheated oven. Bake for 40 to 45 minutes or until apples are tender and crust is golden brown.
  5. Remove from oven and serve with vanilla ice cream.
  6. Enjoy.
