Almond Cherry Bread

Every year come July every supermarket has a display of cherries and every time I go I make sure I pick up a couple of pounds. As fast as I bring them home, wash them and put them in a bowl on the counter is as fast as they disappear. Cherries are a great snack. They are sweet, portable and have nutritional value, so I never mind when the family devours them.

Sometimes I like to spice it up and do something a little different with them. So I thought, why not a sweet bread? I couldn’t just make cherry bread, that seemed boring. I tried to think of a flavor that complemented the bright cherry flavor. Thats when I thought of almond. Cherry and almond make the perfect combination for this bread and with that sweet almond glaze on top, it makes for a great summer dessert to serve your guests and its easy to make, so what’s stopping you?

How To Make Almond Cherry Bread

Preheat your oven to 350. Coat a 9” x 5” loaf pan with cooking spray and set to the side.

To a large mixing bowl combine the plain greek yogurt, buttermilk, avocado oil, eggs, granulated sugar, pure vanilla and almond extracts and whisk to combine.

To a separate large mixing bowl whisk together the all purpose flour, baking powder and salt.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Rinse and drain cherries and remove there pit. I have a cherry pitter which is very handy but if you don’t have one you will have to do this step by hand. Once you have removed all the pits, cut the cherries in half and place them in a small bowl. Add the 1 tablespoon of all purpose flour and mix to coat all the cherries. Pour the cherries into the batter and gently fold in, being careful not to over mix.

Pour the batter into the prepared loaf pan and top with pitted cherry halves. Sprinkle the top with sliced almonds and place in the preheated oven for 55 to 60 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool completely.

Now this bread is delicious as is, but for a little added sweetness and almond flavor I added the almond glaze.

To a small bowl I added powdered sugar, heavy cream and almond extract and whisked it together to combine. You want it to be pourable so if it is too thick feel free to add just a touch more cream.

Once bread is completely cooled, remove it from the loaf pan and drizzle the almond glaze on top. Allow the glaze to set, then serve.

Almond Cherry Bread

Ingredients:

  • 1 1/2 Cups all purpose flour
  • 1 1/2 Teaspoons baking powder
  • 1/4 Teaspoon salt
  • 1/2 Cup plain Greek yogurt
  • 1/2 Cup buttermilk,
  • 3/4 Cup granulated sugar
  • 1/2 Cup avocado oil
  • 2 Eggs
  • 1 1/2 Teaspoon pure vanilla extract
  • 1/2 Teaspoon almond extract
  • 1 1/2 Cups fresh cherries, pitted and cut in half
  • 1 Tablespoon all purpose flour
  • 1/2 Cup sliced almonds
  • 5 To 6 Cherries pitted and sliced in half for topping

For The Glaze:

  • 1/2 Cup powdered sugar
  • 2 Tablespoons heavy cream
  • 1/4 Teaspoon almond extract

Instructions:

  1. Preheat oven to 350º. Spray a 9” x 5” loaf pan with cooking spray and set to the side.

  3. To a separate large mixing bowl combine the all purpose flour, baking powder and salt and mix to combine.

  5. To a small mixing bowl add the pitted cherries and 1 tablespoon of all purpose flour and toss to coat.
  6. Fold cherries into batter, being careful not to over mix. Pour batter into prepared loaf pan, top with cherry halves and sprinkle with sliced almonds.
  7. Bake in preheated oven for 55 to 60 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool.
  8. To a small bowl add the powdered sugar, heavy cream and almond extract and whisk to combine ( you are looking for a pourable consistency, if it’s to thick, you can add more cream ).
  9. Remove cooled bread from pan and place on a serving dish. Drizzle bread with glaze and serve.
