Watermelon Granita

On a hot summer day there is nothing like some cool refreshing watermelon, and this Watermelon Granita brings it to a whole new level. With the addition of sweet honey and a slight tanginess from the splash of lemon, then blended together and frozen to create this icy treat, that is sure to please.

How To Make Watermelon Granita

This Watermelon Granita is super easy to prepare. Just peel and dice a seedless watermelon into small pieces. Place the watermelon pieces into the bowl of a food processor along with fresh squeezed lemon juice and honey. Pulse until liquefied. Strain the liquid through a mesh strainer. Pour the liquid into a 9” x 13” casserole dish and discard the pulp left in the strainer. Place the casserole dish in the freezer for one hour.

After one hour remove the casserole dish from the freezer and using a fork scrape the partially frozen liquid until completely stirred. Return the casserole dish to the freezer and continue freezing for 30 to 40 minutes. Repeat the freezing and scraping process until fine crumbs of frozen watermelon form.

Scoop out iced watermelon and place in a serving glass, top with lemon zest and peppermints leaves and serve.

Watermelon Granita

Ingredients:

  • 6 Cups of seedless watermelon, diced
  • 1 Large lemon, juiced
  • 1/3 Cup honey

Instructions:

  1. To the bowl of a food processor add the diced watermelon, fresh squeezed lemon juice and honey. Pulse all ingredients together until liquefied.
  2. Pour liquid watermelon through a mesh strainer. Throw out the pulp and pour remaining liquid into a 9” x 13” casserole dish. Place dish in the freezer for one hour. Remove from freezer and scrape partially frozen liquid with a fork until completely mixed. Return to the freezer for an additional 30 to 40 minutes. Remove from freezer and once again scrape with a fork. Repeat this process until crumbs of frozen watermelon form.
  3. Serve frozen watermelon crumbs in a serving glass and garnish with lemon zest and peppermint leaves and serve immediately.
