Now I don’t know about your family but I know my family is always rushing out of the house in the morning. Now most of the time we try to sit down at the table and have a nice breakfast of either eggs, or maybe a bowl of oatmeal but that isn’t always possible. On those days I want my kids to still have something nutritious to start there day. Something that could hold them over until lunch.
This cookie is the perfect choice. It is loaded with high fiber oats, ground flax seeds, which are a great source of protein and omega 3 fats, dried tart cherries, which are loaded with vitamin C and high in antioxidants, chopped almonds, which have protein, unsweetened shredded coconut, which has a multitude of vitamins and minerals and bittersweet chocolate chips, which have antioxidants and they are just yummy.
Just because I call them a breakfast cookie, doesn’t mean that they are only good as a breakfast substitute, These cookies are great for the kids lunch box as a mid day or after school snack, there great to take to work when you need a little something to get you through your day or to keep in the car for long rides. This cookie will fill you up and hold you over until you have the chance to have a proper meal. I guarantee you will enjoy them.
Tart Cherry Chocolate Chip Breakfast Cookie
Ingredients:
- 3 Cups old fashion oats
- 2 Sticks unsalted butter at room temperature
- 1 Cup light brown sugar
- 1/2 Cup honey
- 2 Eggs at room temperature
- 1 3/4 Cup all purpose flour
- 1/3 Cup ground flax seed
- 1 Teaspoon vanilla extract
- 1 Teaspoon almond extract
- 1 Teaspoon baking powder
- 1 Teaspoon ground cinnamon
- 1 Cup dried unsweetened shredded coconut
- 1 Cup dried tart cherries
- 1 Cup chopped almonds
- 1 Cup bittersweet chocolate chips
Instructions
- Preheat oven to 350º. Line a baking sheet with parchment paper and set aside.
- To the bowl of a stand mixer fitted with a paddle attachment add butter, brown sugar and honey and mix until creamy. Add eggs one at a time mixing until light and fluffy. Add vanilla and almond extracts and continue mixing until combined.
- In a medium bowl add your flour, ground flax seed, baking soda and cinnamon, whisk to combine. Add the flour mixture to the wet ingredients and mix till just combined.
- Add the shredded coconut, tart cherries, chopped almonds and oats and mix again to combine. Add chocolate chips and mix until incorporated.
- Scoop out dough using a large ice cream scoop, they should be about 3 ounces each. Round dough between hands then place 2” apart onto prepared cookie sheet. Flatten dough slightly, you can leave the cookie round or shape into a rectangle. Bake in pre heated oven for 14 – 16 minutes.
- Remove from oven and place on cooling rack until cool.
