Strawberry Jam Sugar Cookies

These Strawberry Jam Sugar Cookies are a combination of a buttery sugar cookie and sweet strawberries baked into one delicious bite.

These Strawberry Jam Sugar Cookies are the perfect treat. The Sugar cookie base is soft and buttery and swirled with a sweet Strawberry Jam. When baked, they make the perfect bite.

These cookies have an intense strawberry flavor, that is due to the use of strawberry jam rather then using fresh strawberries. Jam has a more concentrated flavor which is perfect for these cookies. It changes a standard sugar cookie into something special.

How To Make Strawberry Jam Sugar Cookies

In a large bowl whisk together the all purpose flour, baking soda, cinnamon and salt and set to the side.

To a separate medium bowl whisk together the butter and granulated sugar until combine. Add the the egg and egg yolk and the pure vanilla extract and once again whisk together to combine..

Pour the wet ingredients into the dry ingredients and mix until just combined. Make sure not to over mix. Cookies will become tough if they are over mixed.

Scatter spoonfuls of strawberry jam to the dough then gently fold in. Do not over fold jam into the dough. You want it swirled throughout the dough not completely mixed into the dough. Wrap dough in plastic wrap and place in the refrigerator for 2 to 3 hours or until easy to handle.

Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side. Remove dough from the refrigerator. Scoop out dough using a medium sized ice cream scoop and place on the prepared baking sheet, keeping the cookies at least 2” apart. Place in preheated oven and bake for 15 minutes or until edges are golden brown.

Ingredients:

  • 2 1/2 Cups all purpose flour
  • 3/4 Teaspoon baking soda
  • 1 Teaspoon ground cinnamon
  • 1/2 Teaspoon salt
  • 1 Cup ( 2 sticks ) unsalted butter melted
  • 1 1/4 Cup granulated sugar
  • 1 Egg + 1 egg yolk
  • 2 Teaspoons pure vanilla extract
  • 1/2 Cup strawberry preserves

Instructions:

  1. In a large mixing bowl whisk together the flour, baking soda, cinnamon and salt and set to the side.
  2. To a separate medium bowl whisk together the brown sugar, granulated sugar and melted butter until combined. Add the egg, egg yolk and vanilla extract and continue mixing until incorporated.
  3. Pour the wet ingredients into the dry ingredients and stir until just about combined. Scatter spoonfuls of strawberry jam on the dough and fold 2 to 3 times to combine, you do not want to over mix. You want to see streaks of strawberry jam throughout the dough. Wrap dough in plastic wrap and place in the refrigerator for 2 to 3 hours or until easy to handle.
  4. Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side. Remove dough from refrigerator.
