Strawberry Cake

This Strawberry Cake is super moist and tender and bursting with strawberry flavor. Served with a dollop of fresh whipped cream and you have a great easy dessert to serve at your next dinner party.

Early summer is one of my favorite times of the year. The weather is finally getting warmer, the flowers are all in bloom and the you pick farms are open. Now I know you can just go to the store and pick up a container of strawberries for probably less money but I will say that there is nothing that can compare to a fresh picked strawberry. They are super sweet and juicy and have such intense strawberry flavor, that is hard to find in a store bought strawberry. Not to mention the memories created when spending a beautiful day with friends and family.

This year I definitely went a little over board on the strawberry picking. But since the strawberries looked so go and the family was having such a good time, I didn’t really think about it until I got home and saw all the strawberries and wondered what I would do with them before they started to spoil.

Some ended up in the freezer for smoothies, a bunch were rinsed and just eaten as is and then a portion of them were used for some desserts, my Strawberry Cake being one of them. It was the perfect end to such a beautiful day and best of all it was really easy to make.

How To Make Strawberry Cake

I started by preheating my oven to 350º. I lined a 9” cake pan with parchment paper then sprayed the bottom and the sides of the pan with baking spray and then set it to the side.

To a medium mixing bowl I add the avocado oil, granulated sugar, eggs, plain greek yogurt, lemon zest, lemon juice and pure vanilla extract and whisked it together until it was completely combined.

To a separate large mixing bowl whisk together the all purpose flour, baking powder, cinnamon and salt.

Pour the wet ingredients into the dry ingredients and mix to combine. Set to the side.

Rinse and hull the strawberries. Dice 1 cup of the strawberries into small pieces and place in a small bowl. Cut 1/2 cup of strawberries in half and set to the side.

Pour half of the batter into prepared cake pan. Add the diced strawberries on top and cover with remaining batter. Arrange the remaining halved strawberries on top, cut side down, in the pattern of your choice. Place in preheated oven and bake for 45 to 50 minutes or until golden brown and toothpick inserted in the center comes out clean. Let cool slightly on a cooling rack before removing the cake from the pan.

Once cooled, remove from pan by inverting the cake on a cooling rack. Then place a serving dish over the cake and once again invert the cake onto the serving dish. Dust the top of the cake with powdered sugar and serve with whipped cream and diced strawberries on top.

Strawberry Cake

Ingredients:

  • 1/2 Cup avocado oil
  • 1 Cup granulated sugar
  • 2 Eggs
  • 1 Cup plain greek yogurt
  • 1/4 Cup fresh squeezed lemon juice
  • 1 Tablespoon fresh lemon zest
  • 1 1/2 Teaspoons pure vanilla extract
  • 1 Cup of diced strawberries
  • 2 1/4 Cups all purpose flour
  • 4 Teaspoons baking powder
  • 1 Teaspoon ground cinnamon
  • 1/8 Teaspoon salt
  • 1/2 Cup strawberries cut in half
  • Fresh whipped cream for serving

Instructions:

  1. Preheat the oven to 350º. Line a 9” cake pan with parchment paper. Spray the bottom and sides of the pan with cooking spray and set to the side.
  2. To a medium size mixing bowl add the avocado oil, granulated sugar, eggs, greek yogurt, lemon juice, lemon zest and vanilla extract, whisk to combine.
  3. To a separate large mixing bowl whisk together the all purpose flour, baking powder, cinnamon and salt. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Pour half the batter in the prepared cake pan, add the diced strawberries then cover with the remaining batter. Arrange the remaining 1/2 cup of strawberry halves on top of the cake. Place cake in preheated oven and bake until golden brown 45 to 50 minutes or until toothpick inserted in the center comes out clean. Remove from oven and allow to cool slightly.
  5. Remove cake from the pan and place on a serving dish. Dust the top of the cake with powdered sugar and serve with fresh whipped cream.
