There is nothing better then a sweet ripe strawberry and when they are allowed to ripen on the plant they are even sweeter. Well this year when we took the family strawberry picking at our local farm, we picked way more strawberries then we could possible eat before they would go bad. So I thought Strawberry Bread was a great way to use up some of those delicious strawberries. Not only did I incorporate the strawberries in the batter but I also decided to coat the finished bread with a glaze that was loaded with chunks of sweet strawberries. It is the perfect sweet bite to satisfy anyone’s cravings.
This Strawberry Bread not only taste great it is super easy to make as well. With a few simple ingredients you can have it ready in no time.
How To Make Strawberry Bread With Lemon Strawberry Glaze
Preheat the oven to 350º. Coat a 9” x 5” loaf pan with cooking spray and set to the side.
In a large mixing bowl whisk together the all purpose flour, granulated sugar, brown sugar, baking powder, baking soda and salt. Set to the side.
In a separate medium mixing bowl add the butter milk, avocado oil, eggs, plain greek yogurt, vanilla extract, lemon zest and fresh squeezed lemon juice and mix together until completely combined.
Pour the wet ingredients into the flour mixture and mix until incorporated.
Clean and dice strawberries and place them in a small bowl. Add 1 Tablespoon of flour and toss to combine. Pour strawberries into batter and fold in to incorporate.
Pour batter into prepared loaf pan. Place in the preheated oven and bake for 45 to 50 minutes or until golden brown and toothpick inserted in the middle comes out clean. Set on a wire rack to cool.
While the bread is cooling, start to prepare your glaze. Clean and dice the strawberries into small pieces and place them in a small bowl. Add the powdered sugar and milk and stir until combined,
Remove bread from loaf pan and place on a serving dish. Pour glaze over top of bread and allow to dry slightly then slice and serve.

Strawberry Bread:
- 2 1/2 Cups all purpose flour
- 1/2 Cup granulated sugar
- 1/4 Cup brown sugar
- 2 Teaspoons baking powder
- 1/4 Teaspoon baking soda
- 1/2 Teaspoon salt
- 1 Teaspoon ground cinnamon
- 1/3 Cup buttermilk
- 1/2 Cup avocado oil
- 2 Eggs
- 6 Tablespoons plain greek yogurt
- 2 Tablespoons lemon zest
- 1 Tablespoon fresh squeezed lemon juice
- 2 Teaspoons pure vanilla extract
- 1 1/2 Cup diced fresh strawberries
- 1 Tablespoon all purpose flour
Strawberry Glaze:
- 1/4 Cup fresh strawberries diced into small pieces
- 1 Cup powdered sugar
- 1 Teaspoon milk
Instructions:
- Preheat oven to 350º. Coat a 9” x 5” loaf pan with baking spray and set to the side.
- In a large mixing bowl whisk together the all purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt and cinnamon and set to the side.
- In a separate medium bowl add the buttermilk, avocado oil, eggs, greek yogurt, vanilla extract, lemon zest and lemon juice, whisk until completely combined.
- Pour the wet ingredients into the flour mixture and using a rubber spatula, mix to incorporate.
- To a small bowl all the diced strawberries and the flour and toss to coat. Fold the strawberries into the batter until incorporated. Pour batter into prepared loaf pan and place in preheated oven. Bake for 45 to 50 minutes or until golden brown and toothpick inserted in the middle comes out clean. Remove from oven and allow to cool. Once cooled remove from pan and set on a serving dish.
For Glaze:
- While the bread is cooling, place the diced strawberries in a small bowl. Add the powdered sugar and milk and stir to combine.
- Pour glaze over cooled bread and serve.
