Soft Lemon Cookies

The bright taste of Lemon is usually found in Spring and Summer desserts, but these Soft Lemon Cookies are great any time of year. They are soft and tender and have intense lemon flavor. They make a great addition to my Holiday Cookie Collection.

Soft Lemon Cookies

Ingredients:

Cookie:

  • 2/3 Cup unsalted butter at room temperature
  • 2/3 Cup granulated sugar
  • 1 Cup powdered sugar
  • 2 Eggs
  • 1 Teaspoon pure vanilla extract
  • 1/2 Teaspoon lemon extract
  • 3 Cups cake flour
  • 1 Teaspoon baking powder
  • 1/8 Teaspoon salt
  • 2 Tablespoons fresh squeezed lemon juice
  • 1 Tablespoon finely grated lemon zest

Coating:

  • 1 Cup powdered sugar
  • 1 Tablespoon finely grated lemon zest.

Instructions:

  1. Preheat oven to 325º. Line a baking sheet with parchment paper and set to the side.
  2. To the bowl of a stand mixer fitted with a paddle attachment, beat the butter, granulated sugar and powdered sugar on medium speed until light and fluffy. Add the egg, pure vanilla extract and lemon extract and beat until combined.
  3. In a large mixing bowl, whisk together the cake flour, baking powder and salt. Add to butter mixture. Add the lemon juice and lemon zest and continue mixing until combined, being careful not to over mix.
  4. Scoop out dough using a 1” ice cream scoop. Roll dough between the palms of your hands to smooth. Place rounded balls of dough on to the prepared baking sheet 1” apart and flatten slightly.
  5. Place in preheated oven and bake for 13 to 15 minutes or until the centers are slightly puffy and the edges are golden brown. Remove from oven and place on a wire rack to cool.
  6. While the cookies are baking, place the cup of powdered sugar and tablespoon of lemon zest in a medium sized bowl and mix well to combine. After the cookies are slightly cooled place 2 to 3 cookies at a time into the powdered sugar mixture and toss until cookies are coated. Repeat this process until all the cookies are coated
  7. Store cookies in an air tight container for up to a week or gently place them in a large zip lock storage bag and place in the freezer for up to 3 months.
