I love sweet potatoes and bonus, they’re good for you. Now I didn’t want to take away the nutritional benefit of the sweet potato by frying it, not that I would even know how. I am not big on fried foods and to tell you the truth, I have never deep fried anything before. I just never had a taste for it. That being said, these will come out of the oven nice and crispy as long as you take a few steps to ensure that.
For this recipe I used four small potatoes. Now if you prefer to peel them you can but I like to keep the skins on. Just scrub the potatoes under water and cut the ends off.
Now you will need a spiralizer to get the spiral shape or you can also use a Mandoline but you will get sticks instead of spirals.
I happen to like my spiralizer. I just find it easier. Less chance of cutting my fingers to.
One of the extra steps you will need to do to make these potatoes crispy will be to soak them in cold water for at least 30 minutes. Doing this will remove the excess starch from the potatoes
While the potatoes are soaking you can prepare your spice mix. You will want to whisk all the spices together so that they are evenly distributed on the potatoes.
After the 30 minutes rinse the potatoes thoroughly until the water runs clear. Lay them on a clean kitchen towel to dry. This is very important because a wet potato will not crisp up.
Pre heat oven to 375º. Line two baking sheets with parchment paper. Place potatoes on the parchment, spreading them out as much as possible. Spray the potatoes with olive oil cooking spray. Sprinkle prepared spices on potatoes and toss. Place in preheated oven and bake for 20 to 25 minutes or until you notice some crispy spots on the potatoes. Toss potatoes making sure to spread them out again. Return to oven and bake for an additional 20 to 25 minutes or until done.
Remove from oven, sprinkle with salt and serve immediately. These sweet potatoes are crispy and delicious. It’s a side dish that you’ll be happy to serve your family.
Shoe String Baked Sweet Potato:
Ingredients:
- 4 Small sweet potatoes.
- Olive oil cooking spray.
- 2 Teaspoons smoked paprika.
- 1/4 Teaspoon cayenne pepper.
- 1/4 Teaspoon garlic powder.
- 1/4 Teaspoon onion powder.
- 1/4 Teaspoon black pepper.
- Sea salt.
Instructions:
- Preheat oven to 375º.
- Scrub four sweet potatoes under cold water to clean.
- Use the smallest blade on a spiralizer to create thin spirals.
- Cut the ends off each potato ( it is not necessary to peel them, but you can if preferred ) and spiralize them.
- Place spiraled potatoes in a bowl of ice water for at least 30 minutes.
- In a separate small bowl combine the smoked paprika, cayenne pepper, garlic powder, onion powder, and black pepper and set aside.
- Drain the potatoes and rinse until water runs clear. Place drained potatoes on a clean kitchen towel to dry.
- Line two baking sheets with parchment paper. Spread out the dried potatoes onto the parchment and spray with cooking spray. Sprinkle with seasoning mix and toss to coat.
- Place in preheated oven and bake for 20 – 25 minutes or until some crispy spots are visible. Toss and place back in the oven for an additional 20 – 25 minutes or until done.
- Take potatoes out of the oven, season with sea salt and serve immediately.
