These Raspberry Walnut Spirals are the perfect treat. They have a buttery cream cheese dough with raspberry jam and diced walnuts rolled up inside to create a delicate airy cookie that is perfect for the holidays.
Raspberry Walnut Spiral Cookies
Ingredients:
- 3 Cups all purpose flour
- 1 Package (8oz.) cream cheese
- 1 Cup unsalted butter
- 1/2 Cup raspberry jam
- 1 Cup finely chopped walnuts
Instructions:
- To the bowl of a food processor add the all purpose flour and salt and pulse several times to combine. Add the butter and cream cheese and pulse until the mixture resembles fine crumbs and is starting to cling together. Remove dough from bowl and place on a lightly flowered surface. Knead dough until smooth. Divide into two separate portions and wrap in plastic wrap and chill for 1 hour or until easy to handle.
- On a lightly floured surface, roll out each portion of dough till 1/4” thickness. Fold dough into thirds and wrap with plastic wrap. Chill for two hours.
- Once again on a lightly floured surface, roll each half of the dough into a 14” x 12” rectangle. Spread half of the jam on to each dough, leaving a 1/2” boarder. Sprinkle the chopped walnuts on top of each half.
- Starting on the long side, roll up dough, jelly roll style and seal the seam. Once again wrap each roll with plastic wrap and chill for 1 hour.
- Preheat the oven to 375º. Line a baking sheet with parchment paper and set to the side. Remove the dough from the refrigerator and slice into 1/2” slices. Dip one side of each slice into some course sugar and place 1” apart on the prepared cookie sheet. Place in preheated oven and bake for 15 minutes or until slightly browned. Remove from oven and sprinkle each cookie with some additional course sugar then serve.
