How This Recipe Came About

It was Autumn, and as with every Autumn, I started to crave those fall flavors. You know the ones, sweet earthy pumpkin and warm spices like cinnamon, nutmeg, ginger and cloves. Now normally I would throw together a pumpkin pie and be happy with that, I mean who doesn’t love a good pumpkin pie, right? But, since this was for my holiday table, I wanted to spice things up a bit and do something that my guests weren’t expecting. That is when this Pumpkin Tiramisu came to mind. I thought why not combine the classic Italian dessert, tiramisu, with the classic autumn dessert, pumpkin pie to create a rich and creamy treat. I must say I was quite pleased and best of all, so were my guests.

This Pumpkin Tiramisu is the perfect combination of a classic Italian Tiramisu and the delicious flavors of fall all rolled up into one smooth and creamy dessert.

  • Whisk the cooled coffee and bourbon together in a small shallow bowl.
  • Place the pumpkin puree on a plate and pat dry with a paper towel, changing the paper towel if necessary until pumpkin is very dry. Set to the side.
  • In the bowl of a stand mixer fitted with a whisk attachment, beat the mascarpone cheese, brown sugar, cinnamon, nutmeg, ginger, cloves and salt until combined. Add the vanilla extract and heavy whipping cream and continue beating until combined. Add the drained pumpkin and beat until soft peeks form.
  • Dip the ladyfingers, one at a time in the coffee and place in a single layer in a 2 quart casserole dish, covering the bottom of the dish. Spread an even layer of the pumpkin cream on top, covering all the ladyfingers. Repeat this process with the rest of the ladyfingers and the rest of the pumpkin cream.
  • To make the topping, beat the whipping cream, sugar and vanilla extract until stiff peeks form. Place the whipped cream in a large piping bag fitted with a round tip. Pipe small dollops of the whip cream on top until the entire casserole dish is covered. Place the cocoa powder in a sieve and lightly dust the top of the tiramisu. Place in the refrigerator for at least 4 hours or better yet, overnight to set.
