These Pistachio Trees are a shortbread like cookie with finely chopped pistachios throughout. They are drizzled with chocolate and sprinkled with extra chopped pistachios to give them an extra crunch. They are tender and buttery with just the right amount of sweetness.
Pistachio Trees
Ingredients:
- 1 1/4 Cups all purpose flour
- 3 Tablespoons granulated sugar
- 1/2 Cup ( 1 stick ) unsalted butter
- 1/3 Cup finely chopped pistachio nuts
- Melted chocolate
- Finely chopped pistachios
Instructions:
- Stir together the all purpose flour and sugar in a large mixing bowl. Cut in butter with a pastry cutter until the mixture resembles fine crumbs and starts to cling together. Stir in the 1/3 cups of finely chopped pistachios. Knead dough until smooth. Wrap dough in plastic wrap and place in the refrigerator for 1 hour or until easy to handle ( dough will be crumbly ).
- Preheat oven to 325º. Line a baking sheet with parchment paper and set to the side. Roll out dough to 1/8” thickness. Using a tree shaped cookie cutter, cut out as many cookies as possible and place on prepared cookie sheet 2” apart. Repeat with the remaining cookie dough until all the dough has been used.
- Place in preheated oven and bake for 18 to 20 minutes or until edges are just beginning to brown. Remove from oven and allow to cool on a wire rack.
- Once cookies have cooled completely, drizzle with melted chocolate and sprinkle with finely chopped pistachios and serve.
