Ingredients:
- Medjool Dates: Pitted and placed down on a slice of parchment paper overlapping each other to form the base for these squares.

Ingredients
16 Medjool Dates, pitted and flattened
1 Tablespoon Pure Maple Syrup
2 Tablespoons Almond Flour
1 1/2 Teaspoons Pure Vanilla Extract
1/3 Cup Peanuts Chopped
1/4 Cup Bittersweet Chocolate chopped
1 Cup bittersweet chocolate, for coating
1 Teaspoon Coconut Oil
Directions
- Add peanut butter, maple syrup, almond flour and vanilla extract together in a medium sized mixing bowl. Fold in the chopped peanuts and chocolate. Set to the side.
- Place pitted, flattened dates face down on a piece of parchment paper overlapping each other. Cover with a second piece of parchment paper and flatten with a rolling pin. Remove top layer of parchment paper.
- Top flattened dates with the peanut butter mix and spread to an even layer. Place in the freezer for 15 minutes to set up.
- Meanwhile, to make the chocolate coating, place the chopped chocolate and coconut oil in a microwave safe bowl and microwave in 30 second intervals until melted and smooth.
- Remove the date peanut butter slab from the freezer and cut into 2’ x 2’ squares. Dip each square in the melted chocolate and place on a piece of parchment paper. Return to freezer to set.
- Store in an air tight container in the freezer for up to 3 months.
