This Peanut Butter Chocolate Chip Granola is a perfect snack. It’s a great addition to your yogurt or just on its own. Whether home or on the go, its a perfect snack to satisfy anyone.
I alway try to have a batch of homemade granola on hand at all times. It’s the perfect addition to yogurt, in a bowl with a little milk or by the handful. I personally love sprinkling a bit of granola on plain greek yogurt, it gives me that extra sweet crunch I’m looking for. Plus the added benefits of the protein from the nuts and the fiber from the oats, and when you make your own you don’t have to worry about the added ingredients that you don’t want.

How To Make Peanut Butter Chocolate Chip Granola
Start by preheating your oven to 350º. Line a baking sheet with parchment paper and set it aside.
In a large mixing bowl stir together the maple syrup, peanut butter, avocado oil and vanilla extract and mix until completely combined.
To the same bowl add the oats, brown sugar, cinnamon, chopped almonds, cocoa nibs and salt and mix until incorporated.
Spread oat mixture evenly over prepared baking sheet. Place in preheated oven and bake for 25 to 30 minutes or until golden brown, stirring if you notice that the edges are browning to quickly. The less you stir the granola, the clumpier it will be. Remove from oven and allow to cool completely.
Once granola has completely cooled add the mini chocolate chips and mix to combine. Store granola in an air tight container.

Ingredients:
- 2 Tablespoons creamy peanut butter
- 3 Tablespoons pure maple syrup
- 1/4 Cup avocado oil
- 1 Teaspoon pure vanilla extract
- 2 1/2 Cups old fashion rolled oats.
- 3 Tablespoons brown sugar
- 1/2 Cup chopped almonds
- 3 Tablespoons cocoa nibs
- 1 Teaspoon ground cinnamon
- 1/2 Teaspoon salt
- 1/4 Cup mini chocolate chips
Instructions:
- Preheat oven to 350º. Line a baking sheet with parchment paper and set to the side.
- In a large mixing bowl whisk together the maple syrup, peanut butter, avocado oil and vanilla extract.
- To the same bowl add the oats, brown sugar, cinnamon, chopped almonds, cocoa nibs and salt and mix until completely combined.
- Pour oat mixture onto the prepared baking sheet and spread out evenly. Place in preheated oven and bake for 25 – 30 minutes or until golden brown. If edges start to brown, give it a gentle stir. The more you stir the less the granola will clump. Remove from oven and allow to cool completely. Once completely cooled, add the mini chocolate chips and stir to combine. Store in an air tight container.
